  • 4 large eggs
  • salt and pepper to taste

  • 1 cup short grain brown rice
  • 2 cups water

For the Hummus Dressing

  • 3 tablespoons hummus
  • 1 teaspoon honey
  • 1/2 tablespoon apple cider vinegar

  • 1/4 teaspoon ground black pepper
