Ingredients

  • 3 tablespoons balsamic vinaigrette*
  • 1/4 cup pine nuts
  • 2.5 oz. arugula
  • 1/2 medium red onion, diced
  • 1/2 cup fresh blueberries
  • 12 oz. cherry tomatoes
  • 1/3 cup dried cranberries
  • 1/3 cup goat cheese crumbles

Instructions

  1. Begin by preparing your balsamic vinaigrette and set it aside. While you can use any vinaigrette you have, we highly recommend our homemade balsamic for its superior flavor.
  2. Next, in a small skillet, toast the pine nuts over medium heat for approximately 4-5 minutes, or until they turn a beautiful golden brown. Be vigilant, as pine nuts can quickly go from perfectly toasted to burnt; monitor them closely. Remove from heat and allow to cool completely.
  3. In a large mixing bowl, combine the arugula, diced red onion, fresh blueberries, cherry tomatoes, dried cranberries, goat cheese crumbles, and the cooled toasted pine nuts. Gently toss all the ingredients together to ensure an even distribution.
  4. Finally, drizzle the dressing onto the salad, adding one tablespoon at a time. Continue to add dressing gradually until your salad is coated to your desired preference.**

  • If you prepare our full homemade balsamic vinaigrette recipe, you will likely have extra dressing! It stores wonderfully in the refrigerator for up to 7 days, ready for your next salad.
