Ingredients

Steak Marinade

  • ½ cup salsa verde
  • 3 tablespoons orange juice
  • 1 tablespoon Worcestershire sauce
  • Zest from 1 large lime
  • 2 tablespoons olive oil
  • 2 teaspoons coarse sea salt
  • 2 teaspoons chili powder
  • ½ teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder

Steak

  • 1.5 – 2 lbs. flank steak, approximately 1-1.5 inches thick
  • 1 teaspoon kosher salt (for seasoning steak before marinating)

Rice + Vegetables Filling

  • 1 cup white rice (uncooked)
  • ½ cup olive oil, separated (1 tbsp for rice, 2 tbsp for onion/garlic, remaining for searing steak)
  • 1 small white onion, finely minced
  • ¾ teaspoon coarse kosher salt, separated (½ tsp for onion, ¼ tsp for green pepper/beans)
  • 4 cloves garlic, minced
  • 1 teaspoon fajita seasoning
  • 1 green bell pepper, finely diced
  • 15 oz. can pinto beans, thoroughly drained and rinsed
  • 1 cup chopped fresh cilantro
  • 2 tablespoons fresh lime juice

Cotija Sauce & Burrito Assembly

  • 4 oz. cream cheese, softened to room temperature
  • ¾ cup full-fat, plain Greek yogurt
  • 4 oz. cotija crumbles (approximately ⅓ cup)
  • 1 tablespoon Tapatio hot sauce (adjust to taste)
  • 6-8 large, burrito-sized flour tortillas

Instructions

  1. Prepare the Steak Marinade: In a mixing bowl, combine salsa verde, orange juice, Worcestershire sauce, lime zest, 2 tbsp olive oil, 2 tsp sea salt, chili powder, paprika, ground cumin, and garlic powder. Whisk until thoroughly combined.
  2. Prepare the Steak: Place flank steak on a cutting board, season with 1 tsp kosher salt, massaging it in. Cover with parchment paper and pound to an even thickness of about 1-1.5 inches using a meat tenderizer.
  3. Marinate the Steak: Transfer steak to a baking dish or plastic bag. Pour marinade over, massage it in, and refrigerate for at least 2 hours or overnight. Before cooking, let steak sit at room temperature for 20-30 minutes.
  4. Cook the Rice: In a saucepan, combine 1.5 cups water, 1 cup white rice, and 1 tbsp olive oil. Bring to a boil over high heat. Reduce heat to low, cover, and cook for 20 minutes.
  5. Rest and Cool Rice: Remove rice from heat and let rest, covered, for 10 minutes. Fluff with a fork, then transfer to a plate to cool completely. Set aside.
  6. Sauté Onions: Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add minced onion and ½ tsp salt. Sauté for 8-10 minutes until soft and translucent.
  7. Cook Vegetables & Beans: Add minced garlic and sauté for 1 minute until fragrant. Add diced green pepper, remaining ¼ tsp salt, drained pinto beans, and fajita seasoning. Toss to combine and sauté for 3-4 minutes.
  8. Combine Filling: Remove skillet from heat. Add the cooled rice, chopped fresh cilantro, and fresh lime juice to the pinto bean mixture. Toss gently until all ingredients are well mixed. Set aside.
  9. Sear the Steak: Heat the remaining olive oil (about 2-3 tbsp) in a large cast iron skillet over medium-high heat until hot. Add the marinated flank steak and sear for 3-4 minutes per side, until internal temperature reaches 135ºF (60ºC) for medium-rare. Remove and let rest for 10 minutes before slicing.
  10. Slice Steak: Slice the rested flank steak thinly against the grain, then chop into small bite-sized pieces.
  11. Prepare Cotija Sauce: In a bowl, combine softened cream cheese, Greek yogurt, cotija crumbles, and Tapatio. Mix until completely smooth and creamy.
  12. Assemble Burritos: Lay tortillas on a clean surface. Spread 1-2 tablespoons of cotija sauce evenly over each. Evenly distribute the rice and vegetable mixture and chopped steak onto each tortilla.
  13. Roll Burritos: Tightly wrap each burrito by folding the two opposite sides inward, then folding up the bottom edge, and rolling firmly away from you until complete. Repeat for all burritos.

Stovetop Heating Instructions (for fresh or thawed burritos)

  1. Heat a large skillet over medium-high heat with 1 tablespoon of olive oil.
  2. Place burrito(s) in the pan (seam-side down first) and brown for 2-3 minutes on each side over medium heat until golden and warmed through.
  3. Remove from stovetop and serve hot.

Oven Heating Instructions (for fresh or thawed burritos)

  1. Preheat oven to 425ºF (220ºC). Spray a casserole dish or baking sheet with non-stick spray.
