Fall Flavors Reimagined in a Hearty Bowl
On a particularly chilly day in Minneapolis, the inspiration for this recipe struck, igniting a craving for all the comforting aromas and tastes of fall. This casserole delivers precisely that – a concentrated burst of autumn’s finest flavors, harmoniously blended into one satisfying dish. We’re talking about the earthy goodness of wild rice, the creamy sweetness of butternut squash, the fragrant notes of fresh herbs, the satisfying crunch of toasted pecans, the tart bursts of dried cranberries, and, of course, the rich, savory chicken. Every ingredient plays a crucial role, creating a balanced and deeply flavorful profile that is simply irresistible.
Wild rice, with its distinctive nutty flavor and chewy texture, forms the perfect base, providing a hearty foundation. Butternut squash, roasted to perfection, adds a natural sweetness and a vibrant color that brightens the entire dish. Fresh thyme infuses the casserole with an aromatic, herbaceous quality, elevating the overall freshness. The addition of pecans brings a wonderful textural contrast and a subtle richness, while dried cranberries cut through the savory notes with their delightful tartness, offering a pleasant surprise in every bite. And the tender, savory chicken rounds out the dish, ensuring it’s packed with protein and utterly fulfilling. Together, these components create a symphony of flavors and textures that truly embody the essence of the fall season.

Why This Butternut Squash Chicken Casserole is a Must-Make
This casserole isn’t just delicious; it’s incredibly versatile and practical, making it a fantastic addition to your recipe repertoire for several key reasons:
Perfect for Meal Prep
Prepare to stock your fridge with several days’ worth of wholesome lunches and dinners! This butternut squash, chicken, and wild rice casserole is an absolute dream for meal prepping. Its flavors meld and deepen beautifully overnight, often tasting even better on day two or three. Simply portion it into individual containers for grab-and-go meals throughout your busy week. It reheats effortlessly in the microwave or oven, providing a convenient and nutritious option whenever hunger strikes. Imagine having a balanced, delicious meal ready in minutes after a long day – that’s the power of this casserole!
Ideal for Serving a Crowd
Whether you’re hosting a family dinner, entertaining friends, or bringing a dish to a potluck, this recipe is perfectly suited for feeding a group. Generously serving 6 to 8 people, this casserole is as hearty as it is flavorful, ensuring everyone leaves the table feeling satisfied and nourished. Its comforting appeal makes it a universal favorite, and its substantial nature means it can easily serve as the main course, requiring minimal accompaniment. Double the recipe in a larger baking dish if you’re expecting an even bigger gathering, and watch it disappear!
A Wholesome and Balanced Meal
Achieving a balanced meal can sometimes feel like a puzzle, but this casserole simplifies it beautifully. It’s a complete package, delivering a robust combination of protein, essential vegetables, and complex grains all in one delectable dish. The chicken provides lean protein for muscle repair and satiety, while the butternut squash offers a rich source of vitamins (especially Vitamin A), antioxidants, and dietary fiber. The wild rice blend contributes complex carbohydrates for sustained energy and additional fiber. When combined with healthy fats from olive oil and nuts, this casserole ensures you’re getting a well-rounded, nutrient-dense meal that truly fuels your body and satisfies your palate. It’s comfort food that you can feel good about eating.

Easy Customization and Ingredient Swaps
One of the best aspects of a casserole is its inherent flexibility. This Butternut Squash, Chicken, and Wild Rice Casserole is wonderfully adaptable, allowing you to tailor it to your dietary preferences or what you have on hand. Don’t be afraid to get creative and make it your own!
Make It Meatless
For a delicious vegetarian version, simply swap the chicken for plant-based protein. We recommend using two 15-ounce cans of rinsed and drained reduced-sodium white beans, such as great Northern or cannellini beans. These beans offer a similar hearty texture and absorb the casserole’s flavors beautifully. Add the beans to the squash mixture during step 5 of the instructions, and continue with the recipe as directed. You could also experiment with chickpeas or a firm, pressed tofu for another meatless option.
Other Cuts of Chicken
While boneless, skinless chicken thighs offer incredible flavor and moisture, you can easily substitute them with other chicken cuts. If you prefer a leaner option, use 1.5 pounds of boneless, skinless chicken breasts, ensuring they are cooked to an internal temperature of 165°F. For ultimate convenience, if you have leftover cooked chicken from a roasted whole chicken or rotisserie chicken, simply shred or chop 1.5 pounds of any cut and incorporate it into the casserole in step 5, significantly reducing your prep time.
Vegetable Boost
Feel free to add other fall-friendly vegetables to this casserole. Sliced mushrooms, chopped carrots, or even some sautéed spinach could be wonderful additions. Introduce them to the skillet with the butternut squash and onion in step 4 to ensure they soften nicely and meld with the other flavors. A handful of chopped kale added in step 5 would also wilt beautifully into the mix, adding extra nutrients and a touch of color.

How Long Will This Casserole Keep?
This Butternut Squash, Chicken, and Wild Rice Casserole is excellent for making ahead, and its flavors often develop even further after a day or two. Most chicken casseroles, including this one, will last for 3 to 5 days when stored properly in the refrigerator. To ensure maximum freshness and food safety, always allow the casserole to cool completely before transferring it to storage containers.
Storage Tip: For optimal freshness and to prevent spoilage, make sure to store your casserole in an airtight container with a tightly fitting lid. This prevents air exposure, which can dry out the casserole and encourage bacterial growth. Label your container with the date it was made so you can easily keep track of its freshness.
Freezer Instructions for Convenient Meals
This casserole is a fantastic candidate for freezing, making it perfect for those times you need a quick, homemade meal. Having a frozen casserole on hand can be a lifesaver on busy weeknights or unexpected guests.
To Freeze: After baking the casserole completely, allow it to cool thoroughly to room temperature. This is crucial to prevent ice crystals from forming, which can affect texture. Once cooled, cover the casserole tightly with a layer of plastic wrap directly on the surface, followed by a layer of aluminum foil. For best results and to prevent freezer burn, you can also transfer individual portions to freezer-safe containers. Properly stored, the casserole can be kept in the freezer for up to 3 months.
To Thaw and Reheat: When you’re ready to enjoy your frozen casserole, transfer it to the refrigerator and let it thaw overnight. This slow thawing process helps maintain the texture and flavor. Once thawed, bring the casserole to room temperature by letting it sit on the counter for about 30 minutes. Then, cover it with foil to prevent drying and reheat in a preheated 350°F (175°C) oven until it is warmed through, typically 20-30 minutes for individual portions or 45-60 minutes for a whole casserole. Always ensure you use a pan that is both freezer and oven safe if reheating directly from the freezer, though thawing first is generally recommended for best results. The internal temperature should reach 165°F (74°C) for safe consumption.

Butternut Squash, Chicken and Wild Rice Casserole
Straight from The Well Plated Cookbook, this Butternut Squash, Chicken and Wild Rice Casserole is the ultimate Fall dish!
By: Emily Richter
Prep Time: 25 mins
Cook Time: 45 mins
Total Time: 1 hr 10 mins
Servings: 6-8
Ingredients
- 1 cup uncooked wild and brown rice blend
- 1.5 pounds boneless, skinless chicken thighs, trimmed of excess fat
- 4 tablespoons extra virgin olive oil, divided
- ½ teaspoon kosher salt, divided
- ½ teaspoon ground black pepper, divided
- 1 small butternut squash, about 1½ lbs., peeled, seeded, and cut into ½-inch cubes
- 1 medium yellow onion, cut into ¼-inch dice (about 1½ cups)
- 1 tablespoon chopped fresh thyme, plus additional for garnish
- ¾ cup dried cranberries
- ½ cup shredded Parmesan cheese, about 2 ounces, divided
- ½ cup roughly chopped raw pecans or walnuts
Instructions
- Cook the rice blend according to the package instructions until tender. Once cooked, drain off any excess liquid and set the rice aside. You should have approximately 3 cups of cooked rice.
- Position an oven rack in the center of your oven and preheat the oven to 425°F (220°C). For easier cleanup, line the bottom of a 9×13-inch baking dish with a large piece of aluminum foil or parchment paper. Arrange the chicken thighs in a single layer in the prepared dish, tucking any loose side portions underneath to create an even thickness. Drizzle the chicken with 2 tablespoons of the olive oil and season evenly with ¼ teaspoon of kosher salt and ¼ teaspoon of ground black pepper.
- Bake the chicken on the center rack of the oven for approximately 20 minutes, or until an instant-read thermometer inserted into the thickest part of the chicken registers 165°F (74°C). Immediately transfer the cooked chicken from the baking dish to a clean plate and cover loosely with foil. Let it rest for 10 minutes. While the chicken rests, reduce the oven temperature to 350°F (175°C). Discard the used foil or parchment from the baking dish, but keep the pan handy as you will reuse it.
- While the chicken is baking and resting, prepare the butternut squash. Peel the squash using a vegetable peeler and trim off both the top and bottom ends. Carefully cut the slender neck portion away from the round base. Stand the round base upright on its flat end and cut it in half from top to bottom. Using a spoon, scoop out and discard the seeds and fibrous strands from both halves of the base. Cut both the base and neck of the squash into uniform ½-inch cubes. You should yield approximately 4 cups of cubed butternut squash.
- In a large, deep skillet with a tight-fitting lid, heat the remaining 2 tablespoons of olive oil over medium heat. Add the cubed butternut squash, diced yellow onion, and the remaining ¼ teaspoon of kosher salt and ¼ teaspoon of black pepper to the skillet. Sauté, stirring occasionally, until the onion begins to soften, which should take about 2 minutes. Cover the skillet and continue to cook, stirring periodically, until the butternut squash is tender but still retains a slight chew, approximately 6 to 8 minutes.
- Once the rested chicken has cooled slightly, cut it into bite-sized pieces. Add the chopped chicken to the skillet with the cooked butternut squash and onion. Stir in the chopped fresh thyme, dried cranberries, ¼ cup of the shredded Parmesan cheese, and the cooked wild and brown rice blend. Mix all the ingredients thoroughly until well combined and evenly distributed.
- Lightly coat the same 9×13-inch baking dish (from which you removed the chicken – no need to wash it in between!) with a nonstick cooking spray. Using a large spoon or spatula, scoop the entire butternut squash and rice mixture into the prepared dish, spreading it out into an even layer.
- Bake the casserole in the preheated 350°F (175°C) oven for 15 minutes. After 15 minutes, carefully remove the casserole from the oven and evenly sprinkle the roughly chopped pecans (or walnuts) and the remaining ¼ cup of shredded Parmesan cheese over the top. Return the casserole to the oven and bake for an additional 8 to 10 minutes, or until the cheese is beautifully melted and bubbly, and the nuts are lightly toasted and crisp.
- Remove the finished casserole from the oven. For an extra touch of freshness and flavor, sprinkle with additional chopped fresh thyme just before serving. Serve warm and enjoy this ultimate fall comfort dish!
