  • 1/4 cup Greek yogurt
  • 1.5 cups shredded Gruyère cheese, separated

Instructions

  1. Preheat your oven to 400ºF (200ºC).
  2. Unroll the thawed pre-made pie crust and gently place it into a 9-inch circular pie pan. Pinch the edges to help it hold its shape.
  3. Use a fork to prick the bottom of the pie crust 5-7 times to prevent bubbling during baking.
  4. Place the crust into the oven and bake for 10 minutes. Check periodically for bubbles and prick if necessary. Remove from oven and set aside.
  5. Prepare the quiche filling: Heat a large skillet over medium-high heat with olive oil. Add minced onions and 1/8 teaspoon of salt. Sauté for 3-5 minutes until translucent. Add minced garlic and sauté for an additional minute.
  6. Reduce heat to medium-low. Add half of the chopped fresh spinach and toss with onions and oil until wilted. Add remaining spinach, sprinkle with 1/8 teaspoon of salt, and sauté for another 3-5 minutes until all liquid evaporates. Remove skillet from heat.
  7. In a large bowl, whisk eggs and milk until combined. Add Greek yogurt and whisk until the mixture thickens slightly.
  8. Stir 1 cup of shredded Gruyère cheese into the egg mixture until well combined.
  9. Place the partially cooked pie crust on a baking sheet. Sprinkle the remaining 1/2 cup of shredded Gruyère cheese over the crust. Evenly spread the spinach mixture over the cheese. Finally, pour the egg and cheese mixture on top of the spinach.
  10. Bake the quiche for 20 minutes. If the crust begins to brown too much, tent the edges with aluminum foil. Continue baking for an additional 20-25 minutes, or until the center is fully set and a knife inserted comes out clean (internal temperature 160-165°F / 71-74°C).
  11. Remove from oven and let rest for 5-10 minutes before slicing and serving. Enjoy!
