Essential Ingredients for Your Perfect Summer Pasta
Not only is this summer pasta wonderfully delicious, but it also features a remarkably simple list of ingredients, most of which you likely already have or can easily find. This streamlined approach means less time scrambling in the grocery store and more time enjoying the cooking process. Here’s a comprehensive look at everything you’ll need to create this delightful dish:
- Cherry Tomatoes: The star of the sauce, bursting with sweet and tangy flavor.
- Garlic: Adds an essential aromatic foundation.
- Olive Oil: The base for sautéing and building flavor.
- Red Wine: Contributes depth and complexity to the sauce.
- Ricotta Cheese: Transforms the sauce into a luxuriously creamy masterpiece.
- Balsamic Vinegar: Provides a delightful tang and subtle sweetness.
- Butter: Enhances richness and smoothness.
- Pasta: Any shape works beautifully, but angel hair or spaghetti are excellent choices.
- Salt + Pepper: Essential seasonings to bring out all the flavors.
- Fresh Basil: A non-negotiable garnish for its vibrant aroma and taste.
- Grated Parmesan: For a final sprinkle of salty, savory goodness.
Pro Tip: Tomato Alternatives
Don’t have cherry tomatoes on hand, or prefer to use larger varieties? No problem! You can easily chop up about 2 cups of larger tomatoes, such as Roma or beefsteak, and use them as a substitute. The main difference will simply be the initial chopping required, as cherry tomatoes are typically used whole.
When using larger tomatoes, quarter them or dice them into bite-sized pieces so they break down efficiently and integrate well into the sauce, just like their smaller counterparts.

Crafting the Unforgettable Homemade Tomato Sauce
When it comes to tomato sauce recipes, the culinary world offers a vast array of possibilities. While we feature a fantastic homemade marinara sauce recipe that you could certainly use, or even opt for your favorite store-bought brand (we’re particularly fond of Rao’s sauce for its quality), the sauce for this garden summer pasta stands out in its own right.
This easy tomato sauce is truly one of our favorites. Why, you ask? Because it’s incredibly simple to prepare, yet it yields such a remarkably fresh and delicious flavor with minimal effort. It highlights the natural sweetness of the tomatoes, creating a robust base that doesn’t require hours of simmering.
The Magic Behind the Sauce: Bursting Tomatoes and Rich Flavors
The process of creating this sauce is straightforward and rewarding. Begin by sautéing your chosen tomatoes in a generous amount of olive oil, alongside freshly minced garlic, a splash of tangy balsamic vinegar, and a hint of red wine. Allow this mixture to gently cook down for approximately 15 minutes, or until the tomatoes soften, burst, and begin to break down into a luscious, chunky sauce. This gentle simmering process concentrates their natural sugars and acidity, developing a profound depth of flavor.
Once your tomato base has achieved that perfect consistency, the final touches elevate it to a new level of indulgence. Simply stir in a knob of butter and a dollop of creamy ricotta cheese. These additions melt seamlessly into the sauce, imparting an unparalleled richness and velvety texture. The result is a sauce that is seriously amazing – balanced, flavorful, and wonderfully comforting.
Ingredient Spotlight: Making Smart Substitutions
Can I use any kind of tomato?
Absolutely! While cherry tomatoes are recommended for their quick-cooking nature and burst of flavor, nearly any kind of ripe tomato will work beautifully in this recipe. If you opt for medium or large tomatoes, we highly recommend quartering or dicing them into smaller pieces. This ensures they cook down at a similar rate to cherry tomatoes, allowing them to release their juices and contribute to the sauce’s body effectively.
What can I use instead of red wine?
If you prefer not to use red wine, or simply don’t have any on hand, there are excellent substitutes that will still yield a fantastic sauce. We suggest replacing the 1/4 cup of red wine with an equal amount of starchy pasta water. This water, saved from cooking your pasta, is rich in starch and helps to emulsify and thicken the sauce, adding a silky texture. Additionally, you can enhance the flavor by adding a little more balsamic vinegar or a splash of vegetable or chicken broth to achieve a similar depth of taste.

Expert Tips for Your Best Summer Pasta Yet
While this summer pasta recipe is wonderfully straightforward, a few key tips and tricks can help you elevate it from great to truly exceptional. Follow these suggestions to make your cooking experience extra easy and your final dish perfectly delightful.
- Monitor Tomato Cooking Carefully: One crucial aspect to watch is the cooking time for your tomatoes. You want them to burst and release their flavorful juices, but there’s a fine line between perfectly broken-down tomatoes and those that become overcooked. Once they pop, continue to simmer until they form a saucy consistency. Overcooking can lead to the skins becoming hard and less pleasant to eat, so keep a close eye on them to achieve that ideal tender texture.
- Finish with a Zest of Lemon: If you’re looking to add an extra layer of brightness and lift to your pasta, a squeeze of fresh lemon juice right before serving works wonders. The acidity from the lemon cuts through the richness of the sauce and the ricotta, providing a refreshing counterpoint that awakens all the flavors on your palate. It’s a simple step that makes a big impact.
- Don’t Shy Away from Seasoning: Salt is a fundamental flavor enhancer. If you taste your finished sauce and feel like something is missing, or it just needs a little “oomph,” try adding a bit more salt. It’s easy to underestimate the amount of salt needed to properly season a dish, especially one with fresh ingredients. Taste, adjust, and taste again until the flavors truly sing.
- Unlock Thicker Sauce with Pasta Water: For those who prefer a thicker, more clinging sauce, the secret lies in starchy pasta water. Before draining your pasta, reserve a cup of the cooking liquid. If you desire a richer consistency, add a couple of tablespoons of this reserved pasta water to your sauce and let it simmer for an additional minute or two. The starch from the pasta water helps to emulsify the sauce, creating a beautifully velvety texture that coats every strand of pasta perfectly.
- Experiment with Herbs: While fresh basil is a must, don’t hesitate to experiment with other fresh herbs. A sprinkle of fresh oregano or a bit of finely chopped parsley can add different dimensions of flavor, allowing you to customize the dish to your preference.
- Choose the Right Pasta Shape: While angel hair pasta is suggested, this sauce is incredibly versatile. Consider using other pasta shapes like penne, fusilli, or orecchiette, which are excellent for capturing and holding onto the creamy tomato sauce. The right pasta shape can enhance the overall eating experience.
Storing Your Delicious Leftovers
Managed to have some leftover garden summer pasta? Fantastic! This dish tastes just as good, if not better, the next day. To ensure your leftovers stay fresh and delicious, follow these simple storage guidelines:
First, allow the pasta to cool completely to room temperature before storing. This prevents condensation from building up, which can make the pasta soggy. Once cooled, transfer the pasta into an airtight container. Store it in the refrigerator for up to 3-5 days. For reheating, gently warm it on the stovetop with a splash of water or broth to loosen the sauce, or use a microwave. Enjoying this fresh and creamy pasta again will be a treat!

Ingredients
- 8 oz. angel hair pasta
- 2 tablespoons olive oil
- 6 cloves garlic, smashed and minced
- 14 oz. cherry tomatoes, whole
- 1/4 teaspoon salt
- 1/4 teaspoon ground pepper
- 1/4 cup red wine
- 2 tablespoons balsamic vinegar
- 1/4 cup ricotta cheese
- 3 tablespoons butter, unsalted
- toppings: shredded parmesan cheese and fresh basil
Instructions
-
First, prepare the noodles by bringing a large pot of water to a rolling boil. Add salt generously to season the pasta from within.
-
Once the water is vigorously boiling, add your chosen pasta (angel hair recommended) and cook according to package directions until the noodles are perfectly al dente, meaning they are tender but still have a slight bite.
-
Next, carefully drain the pasta water, reserving about 1 cup of the starchy liquid before discarding the rest. Set the cooked noodles aside.
-
To prepare the flavorful pasta sauce, heat a large skillet or sauté pan over medium-high heat. Add the olive oil to the hot pan.
-
Once the olive oil is shimmering and fragrant, add the minced garlic to the pan. Sauté for about one minute, being careful not to burn it, until it becomes aromatic.
-
Add the whole cherry tomatoes (or chopped larger tomatoes) to the olive oil and garlic mixture. Season generously with salt and freshly ground pepper.
-
Reduce the heat to medium-low, cover the skillet, and let the tomatoes cook for approximately 5 minutes. Stir occasionally to ensure even cooking and prevent sticking.
-
Uncover the tomatoes and add the red wine (or substitute) and balsamic vinegar to the pan. Stir well and allow the tomatoes to simmer in this liquid for another 8-10 minutes, or until most of the cherry tomatoes have burst open and released their juices, beginning to form a sauce.
-
After the tomatoes have burst and the sauce has started to thicken (you’ll know it’s ready when scraping the bottom of the pan leaves a film), stir in the ricotta cheese and butter. Continue to stir gently until the ricotta and butter have completely dissolved into the sauce, creating a creamy and homogenous consistency.
-
Let the sauce gently simmer for an additional two minutes to allow all the flavors to meld beautifully. Then, remove the skillet from the heat.
-
Finally, add the cooked and drained noodles directly to the sauce in the skillet. Toss everything together thoroughly until the pasta is evenly coated with the rich, creamy tomato sauce.
-
Serve immediately, garnished generously with fresh basil leaves and a sprinkle of grated Parmesan cheese for the perfect finish.
Tips & Notes
For an extra burst of fresh flavor, consider adding a handful of spinach or arugula to the pasta just before serving, allowing the residual heat to slightly wilt them.
If you prefer a spicier kick, a pinch of red pepper flakes can be added along with the garlic.
