Ingredients

For the Meatballs

  • 1 lb. ground chicken
  • 1/2 tablespoon garlic powder
  • 1 tablespoon dried basil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 tablespoon chili paste
  • 1-2 tablespoons olive oil
  • 1 egg
  • 1/4 cup flour (any kind will work)
  • 1/4 cup rolled oats
  • 1/8 teaspoon salt

For the Curry Sauce

  • 1 yellow onion, sliced
  • 1 tablespoon olive oil
  • 1 tablespoon minced garlic
  • 1 can full-fat coconut milk
  • 3 tablespoons red curry paste
  • 1/2 tablespoon sriracha*
  • 3 tablespoons lime juice

For the Cabbage Salad

  • 4 cups purple cabbage, sliced
  • 1/4 cup cilantro, chopped
  • 2 tablespoons rice vinegar
  • 1/2 tablespoon honey
  • Squeeze fresh lime juice
  • Pinch of salt

For the Cauliflower Rice

  • 2 tablespoons olive oil
  • 3.5 cups riced cauliflower (14 oz. bag)
  • 1 tablespoon lime juice
  • Salt and pepper, to taste

Instructions

  1. First, preheat your oven to 400ºF (200ºC) and lightly spray a casserole dish or cake pan with coconut oil cooking spray. Set this aside.
  2. Prepare your refreshing cabbage salad by combining all ingredients in a mixing bowl. Toss well to ensure everything is evenly coated, then place it in the fridge to chill while you prepare the rest of the meal.
  3. For the meatballs, place all the meatball ingredients into a large mixing bowl. Using your hands, mix until everything is thoroughly combined and uniform. Be careful not to overmix, as this can make the meatballs tough.
  4. Using a tablespoon-sized cookie scoop (note: these are designed to be bite-sized for easier cooking and serving), scoop out the mixture. With slightly moist hands (this prevents sticking), gently mold each scoop into a small ball. Arrange the formed meatballs in your prepared, oiled casserole dish.
  5. Place the meatballs in the preheated oven and bake for 10 minutes. This initial bake will help them firm up before adding the sauce.
  6. While the meatballs are baking, begin preparing the curry sauce. Heat one tablespoon of olive oil in a medium-sized fry pan over medium heat. Once the oil is hot, add the sliced yellow onion.
  7. Sauté the onion for 2-3 minutes until it begins to soften and become translucent. Then, add the remaining curry sauce ingredients to the pan. Bring the mixture to a gentle boil, then reduce heat and let it simmer briefly to meld the flavors.
  8. After the meatballs have baked for 10 minutes, carefully remove them from the oven. Pour the simmering curry sauce evenly over the meatballs in the casserole dish.
