Effortless Perfection: How to Make Slow Cooker Salsa Chicken

The beauty of this recipe lies in its simplicity and the forgiving nature of slow cooking. Our recipe intentionally calls for a combination of both chicken breast and chicken thighs. This choice creates a harmonious balance: the lean, high-protein chicken breasts contribute a healthy foundation, while the slightly richer chicken thighs add depth of flavor and ensure the chicken remains incredibly moist and tender. However, feel free to use whichever cut of chicken you prefer – 2 lbs of breasts or 2 lbs of thighs will work equally well.

Here’s a step-by-step guide to achieving perfectly tender, flavor-infused salsa chicken:

  1. **Prepare Your Chicken:** Begin by seasoning your chicken pieces generously with our simple yet potent spice blend. Ensure each piece is thoroughly coated for maximum flavor infusion. Then, arrange the seasoned chicken evenly at the bottom of your slow cooker. This foundational layer is key to building rich flavor.
  2. **Add the Salsa:** Pour your chosen salsa directly over the seasoned chicken. Ensure the chicken is mostly submerged or well-covered by the salsa. This liquid is essential for keeping the chicken moist and imbuing it with all those delicious salsa flavors as it cooks slowly.
  3. **Slow Cook to Perfection:** Secure the lid on your slow cooker. Cook on the “Low” setting for approximately 6 to 8 hours, or on the “High” setting for 2 to 3 hours. The cooking time can vary slightly depending on your slow cooker and the thickness of your chicken, so always aim for an internal temperature of 165°F (74°C) to ensure it’s fully cooked and safe to eat.
  4. **Shred and Serve:** Once the chicken is cooked through and reaches the perfect internal temperature, it should be incredibly tender and easily shreddable. Carefully remove the chicken from the slow cooker, leaving the savory cooking liquid behind. Using two forks, shred the chicken into bite-sized pieces.
  5. **Reincorporate for Flavor:** Return the shredded chicken to the slow cooker with the reserved cooking liquid. Toss the chicken gently to coat it completely in the flavorful sauce. This step ensures every strand of chicken is infused with the salsa, keeping it moist and packed with taste. Keep it on the “Warm” setting if you’re not serving immediately.

A bowl filled with shredded chicken, fluffy rice, black beans, corn, red onion, tomatoes, lime wedges, fresh cilantro, and vibrant sliced bell peppers, making a complete salsa chicken meal.

Ingredients

Chicken

  • 1 tablespoon ground cumin
  • ½ tablespoon chili powder
  • 1 teaspoon sea salt
  • ½ teaspoon garlic powder
  • 1 lb. boneless skinless chicken breasts
  • 1 lb. boneless skinless chicken thighs
  • 16 oz. salsa, any kind (mild, medium, or hot)

Cilantro Lime Rice

  • 3 cups cooked white rice
  • ¼ cup chopped fresh cilantro
  • 1.5 tablespoons fresh lime juice
  • ¼ teaspoon sea salt

Quick Black Bean Salsa

  • ½ cup sweet corn
  • ½ cup black beans, rinsed and drained
  • 12 oz. cherry tomatoes, halved
  • ½ red onion, finely minced
  • 1 tablespoon red wine vinegar
  • ½ teaspoon sea salt
  • 2 tablespoons fresh chopped cilantro

Fajita Peppers

  • 1 tablespoon avocado oil
  • 2 red bell peppers, thinly sliced
  • 1 white onion, thinly sliced

Instructions

  1. In a small bowl, combine the ground cumin, chili powder, sea salt, and garlic powder. Mix thoroughly to create your chicken seasoning blend.
  2. Place the chicken breasts and thighs into the slow cooker. Sprinkle the prepared spice mixture generously over the chicken, then toss until each piece is completely coated. Pour the entire jar of salsa over the seasoned chicken.
  3. Cover the slow cooker with its lid. Cook the chicken on the “Low” setting for 6-8 hours or on the “High” setting for 2-3 hours. The chicken is done when it’s fork-tender and reaches an internal temperature of 165ºF (74°C).
  4. Once cooked, carefully remove the chicken pieces from the slow cooker. Reserve the delicious cooking liquid in a separate bowl. Using two forks, shred the chicken into desired bite-sized pieces.
  5. Return the shredded chicken to the slow cooker. Add enough of the reserved sauce to moisten and coat the chicken thoroughly. Keep the chicken in the slow cooker on the “Warm” setting while you prepare the other components of your bowls.
  6. If you are preparing fresh rice, follow the package instructions to cook your white rice until fluffy.
  7. In a medium bowl, combine the cooked rice with fresh chopped cilantro, lime juice, and a pinch of salt. Toss gently to ensure everything is well distributed. Set aside.
  8. Prepare the black bean salsa: In a large bowl, combine the sweet corn, black beans, halved cherry tomatoes, minced red onion, red wine vinegar, sea salt, and fresh chopped cilantro. Toss everything together until well combined. Set aside.
  9. For the fajita peppers: Heat 1 tablespoon of avocado oil in a large skillet over medium-high heat. Add the sliced onions and bell peppers to the hot skillet. Season with a touch of salt and sauté for 3-5 minutes, or until the vegetables are tender-crisp and slightly caramelized.
  10. To assemble your bowls, evenly distribute the cilantro lime rice among 4-8 bowls. Top with generous portions of the warm salsa chicken, black bean salsa, and sautéed fajita peppers. If meal prepping, store each component in separate airtight containers to maintain freshness and texture until ready to eat.

Tips & Notes

  • This recipe is designed to yield a substantial amount, making it perfect for feeding a crowd or for simplifying your weekly meal prep.
  • We opt for a blend of chicken breasts and chicken thighs to achieve a balanced flavor and texture profile, combining the leanness of breast meat with the added moisture and richness of thighs. Feel free to use your preferred cut of chicken (all breast or all thigh) based on your dietary preferences.
  • The final flavor of your salsa chicken will be largely influenced by the type and spice level of salsa you choose. Experiment with different varieties, from a mild, sweet tomato salsa to a smoky chipotle or a vibrant salsa verde, to discover your favorite.
  • For an extra layer of flavor, consider adding a squeeze of fresh lime juice and a sprinkle of chopped cilantro to the shredded chicken just before serving.
  • Customize your bowls with additional toppings such as sliced avocado, a dollop of Greek yogurt or sour cream, shredded cheese, or pickled jalapeños for an added zing.
