  • 1.5 lbs. boneless skinless chicken breast, 3–4 chicken breasts
  • 1 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon ground mustard
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon ground pepper
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon paprika
  • 1/2 teaspoon brown sugar
  • 2 –3 tablespoons butter or olive oil, 1 tablespoon/breast

Roasted Potatoes

  • 2 lbs. red potatoes, quartered
  • 1.5 tablespoons olive oil
  • 1/2 tablespoon garlic powder
  • 1 teaspoon dried oregano
  • 1/4 teaspoon coarse sea salt
  • 1/4 teaspoon ground pepper
  • 1/2 teaspoon chili powder

Instructions

Roasted Potatoes

  1. First, preheat your oven to 425ºF (220°C).
  2. Wash and thoroughly pat dry the potatoes. Slice them into quarters and spread them evenly on a large baking sheet.
  3. Drizzle olive oil over the potatoes and toss to coat. In a small bowl, mix together garlic powder, dried oregano, coarse sea salt, ground pepper, and chili powder. Sprinkle this spice blend over the potatoes and toss again, ensuring all potatoes are well covered.
  4. Roast at 425ºF for 30-40 minutes. For even cooking and crispiness, toss the potatoes after 15 minutes, and again at 30 minutes. Depending on the size of your potato quarters, an additional 10 minutes might be necessary. Your potatoes are perfectly cooked when they are wonderfully crispy and golden brown on the outside, yet tender and soft on the inside.

Stovetop Chicken

  1. While the potatoes are roasting, begin preparing the chicken breast.
  2. In a small bowl, combine all the spices for the chicken: garlic powder, chili powder, cumin, dried thyme, ground mustard, dried basil, ground pepper, red pepper flakes, sea salt, paprika, and brown sugar. Set this homemade chicken seasoning aside.
  3. Place each chicken breast on a large cutting board and cover it with a piece of plastic wrap. Using a meat tenderizer (or the flat side of a heavy pan), pound the chicken breasts until they are of an even thickness throughout. This ensures even cooking.
  4. Generously season both sides of the chicken breast with the prepared chicken seasoning blend.
  5. Heat 1/2 tablespoon of butter or olive oil in a large skillet over medium-high heat. Once the butter has melted and is shimmering, carefully place a seasoned chicken breast into the pan. Sear for 2-3 minutes, or until a beautiful golden-brown crust forms. Flip the chicken breast, and if desired, add another 1/2 tablespoon of butter or oil to the pan. Immediately cover the skillet with a lid. Reduce the heat to medium and cook for approximately 6 minutes, or until the chicken breast reaches an internal temperature of 165ºF (74°C) when checked with a meat thermometer.
  6. Once cooked, remove the chicken breast from the pan and let it rest on a clean cutting board for 5-10 minutes before slicing and serving. This resting period is crucial for the juices to redistribute, ensuring a tender and moist result.
