  • 1 cup fresh cranberries, frozen works too

Wet

  • 2 large eggs
  • 1/4 cup maple syrup
  • 1/4 cup unsweetened almond milk
  • 1 cup unsweetened applesauce
  • 1/2 teaspoon orange extract
  • 2 tablespoons melted coconut oil

Instructions

  1. First, preheat your oven to 350ºF (175ºC) and line a 12-cup muffin tin with muffin liners. For extra assurance, we recommend lightly spraying the muffin liners with cooking spray.
  2. Next, in a medium bowl, combine all the dry ingredients: white whole wheat flour, coconut sugar, baking soda, salt, and orange zest. Whisk them together until well mixed.
  3. In a separate large bowl, crack and whisk the 2 eggs until slightly frothy. Then, add the maple syrup, almond milk, unsweetened applesauce, and orange extract. Mix these wet ingredients together until fully combined.
  4. Gradually add the dry ingredient mixture into the wet ingredients. Mix just until combined and no streaks of dry flour remain. Be careful not to overmix the batter. Finally, gently fold in the melted coconut oil until just incorporated.
