  • 1/4 cup tahini
  • 3 tablespoons extra virgin olive oil
  • 2 cloves of garlic, minced
  • 1 tablespoon sriracha, or any kind of hot sauce
  • 2 tablespoons lime juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon cumin

For the Toppings:

  • 1/4 cup red onions, finely diced
  • 1/4 cup tomato, diced
  • 1 tablespoon Nakano Rice Vinegar
  • 1/8 cup cilantro, chopped
  • 1 tablespoon cotija cheese crumbles
  • 1/4 teaspoon sea salt

Instructions

  1. Place 1/2 cup of black beans on the bottom of a serving bowl. Set aside.
  2. Next, place the remaining 1.5 cups of black beans in a high-speed food processor along with tahini, olive oil, minced garlic, sriracha (or hot sauce), lime juice, salt, and cumin. Blend until the mixture is completely smooth and creamy. You may need to use a spatula to scrape down the sides of the food processor bowl a few times to ensure all ingredients are thoroughly blended. If the hummus appears too thick for your preference, add an additional tablespoon or two of olive oil, blending again until it reaches your desired consistency. Once smooth, pour this luscious hummus mixture on top of the reserved black beans in the serving bowl.
  3. To prepare the vibrant topping, combine the finely diced red onions, diced tomato, chopped cilantro, and cotija cheese crumbles in a separate small bowl.
