Unlock the Protein Power: What Makes This Cake Roll So High in Protein?
The secret to this carrot cake roll’s impressive protein content lies in two key ingredients seamlessly integrated into the recipe, ensuring every bite is both delicious and nourishing:
- Vanilla Protein Powder: We strategically incorporate high-quality vanilla protein powder into both the cake batter and the luscious cream cheese frosting. This not only boosts the protein per serving but also enhances the vanilla flavor, complementing the classic carrot cake spices beautifully. While Tera’s Whey is a favorite in our kitchen, feel free to use your preferred vanilla protein powder – whether it’s whey, casein, or a plant-based option.
- Blended Cottage Cheese: This isn’t our first time utilizing the magic of blended cottage cheese, and for good reason! When smoothly blended, cottage cheese transforms into an incredibly creamy, dairy-rich base for our frosting. It’s a fantastic way to add a significant protein boost and achieve an ultra-smooth texture, rivaling traditional cream cheese frostings, but with far superior nutritional value.
Achieving Perfection: Essential Tips for Your Protein Carrot Cake Roll
Creating a stunning and delicious cake roll is easier than you think with these expert tips from our team:
- Prepare Your Carrots Right: If you opt for convenient pre-shredded carrots, a quick rough chop before soaking them in brown sugar is a game-changer. This small step increases their surface area, allowing them to absorb the rich brown sugar flavor more effectively, leading to a more flavorful and moist cake.
- Timing is Key for Rolling: After baking, the cake needs to be rolled while still warm to prevent cracking. However, don’t leave it rolled up in the tea towel for an excessive amount of time. If it sits too long, it might stick to the towel, making unrolling difficult. Aim for it to cool completely in the rolled shape, typically about an hour.
- Powdered Sugar is Your Friend: Before you even think about flipping your warm cake onto the towel, ensure the towel is generously coated with powdered sugar. This creates a non-stick barrier, preventing the delicate cake from adhering to the fabric as it cools and sets its rolled shape.
- Serving Presentation: If you’re planning to make this cake roll ahead of time, hold off on dusting the top with additional powdered sugar until just before serving. Powdered sugar tends to absorb moisture from the cake over time, which can make it disappear or create a soggy appearance. A fresh dusting ensures a beautiful presentation every time.
- Don’t Overbake: Cake rolls are typically thin, so they bake quickly. Keep a close eye on the oven, and remove the cake as soon as a toothpick inserted into the center comes out clean or with moist crumbs. Overbaking can lead to a dry cake that is prone to cracking when rolled.
- Room Temperature Ingredients for Frosting: Ensure your cream cheese and cottage cheese for the frosting are at room temperature. This will help them blend smoothly and prevent lumps, resulting in a silky, spreadable filling.

Serving Suggestions and Customization Ideas
This protein carrot cake roll is fantastic on its own, but you can elevate the experience even further! Serve it with a hot cup of herbal tea or a light coffee for a perfect afternoon treat. For an extra touch of indulgence, a sprinkle of chopped walnuts or pecans on top of the powdered sugar adds a pleasant crunch and nutty flavor. You could also lightly toast some coconut flakes and sprinkle them for a tropical twist.
Feeling creative? Consider adding a small amount of finely chopped pineapple or shredded unsweetened coconut to the cake batter for an additional layer of flavor and moisture. For the frosting, a touch of orange zest could brighten the cream cheese flavor beautifully.

Ingredients
Dry Ingredients
- ⅔ cup all-purpose flour
- 2 tablespoons vanilla protein powder (we used Garden of Life)
- 1.5 teaspoons ground cinnamon
- 1 teaspoon ground ginger
- ¼ teaspoon ground nutmeg
- ⅛ teaspoon ground clove
- ½ teaspoon ground cardamom
- ½ teaspoon kosher salt
- ½ teaspoon baking powder
- ½ teaspoon baking soda
Wet Ingredients
- ⅔ cup packed light brown sugar
- 1.5 cups grated carrots
- 3 large eggs
- 3 tablespoons avocado oil
- 1 teaspoon vanilla extract
Cream Cheese Filling
- 4 oz. softened cream cheese
- ½ cup blended cottage cheese
- 2 tablespoons vanilla protein powder (we used Garden of Life)
- 1 tablespoon maple syrup
Instructions
- Preheat your oven to 375℉ (190°C). Prepare a jelly roll pan (approximately 10×15-inch baking sheet) by lining it with parchment paper and lightly coating it with cooking spray. This prevents sticking and makes flipping easier.
- In a medium bowl, combine the grated carrots and packed brown sugar. Mix thoroughly until the carrots are well coated and start to release some of their moisture. Set this mixture aside to macerate while you prepare other ingredients, allowing the flavors to meld.

- In a large mixing bowl, whisk together the all-purpose flour, kosher salt, ground cinnamon, ground ginger, ground nutmeg, ground clove, ground cardamom, baking powder, and baking soda. Ensure all dry ingredients are evenly distributed, then set this bowl aside.

- Return to your carrot and brown sugar mixture. Crack the three large eggs directly into this bowl and mix vigorously with a whisk or spoon. Continue mixing until the mixture becomes light and foamy on top, indicating the eggs are well incorporated and aerated.

- Next, add the avocado oil and vanilla extract to the wet carrot mixture. Stir until thoroughly combined, ensuring the oil and extract are evenly distributed throughout the batter.

- Gradually fold the dry ingredients into the wet carrot mixture. Mix gently until just combined; be careful not to overmix, as this can lead to a tough cake. Once the batter is uniform, pour it evenly into your prepared jelly roll pan, spreading it to the edges with a spatula.

- Bake in the preheated oven at 375℉ (190°C) for 10-15 minutes. The cake is done when it springs back lightly when touched, or a toothpick inserted into the center comes out clean.
- While the cake is baking, prepare your rolling station. Lay out a clean kitchen towel on a flat surface and evenly sprinkle about ¼ cup of powdered sugar over it. This sugared towel will prevent the warm cake from sticking.
- Once the cake is baked, remove it from the oven and let it cool in the pan for just 5 minutes. This brief cooling period helps the cake firm up slightly before handling.
- After 5 minutes, carefully invert the warm cake onto the prepared sugared kitchen towel. Gently peel off the parchment paper.

- Starting from one of the short ends, carefully and snugly roll the warm cake with the towel, creating a spiral. Place the rolled cake, seam-side down, on a wire rack to cool completely. This process can take about an hour. It’s crucial for the cake to cool fully in this rolled shape to “train” it to hold its form and prevent cracking later.

- While the cake is cooling, prepare your decadent protein cream cheese filling. In a bowl, combine the softened cream cheese, blended cottage cheese, vanilla protein powder, and maple syrup. Using a hand mixer (or stand mixer), beat the ingredients until the mixture is perfectly smooth and creamy, with no lumps. Set aside until the cake is completely cool.

- Once the cake has completely cooled, gently unroll it from the towel. Carefully spread the prepared cream cheese frosting evenly over the entire surface of the cake, leaving about a ½-inch border along all edges. This ensures the filling doesn’t ooze out when rolled.

- Starting from the same short end you began with, carefully roll the cake back up, this time without the towel, ensuring the filling is evenly distributed within the spiral. Once rolled, place it seam-side down. For a beautiful finish, lightly dust the top with additional powdered sugar just before serving.

- With a sharp knife, slice the cake roll into individual servings. Present your beautiful high-protein carrot cake roll and enjoy every delicious, guilt-free bite!

Additional Tips & Notes
- For grating carrots, a box grater works perfectly to achieve the right texture. Alternatively, a food processor with a grating attachment can save you time and effort.
- As mentioned earlier, if you use pre-shredded carrots, a quick rough chop before soaking them in brown sugar will significantly improve flavor absorption.
- Always remember to hold off on adding the final dusting of powdered sugar until just before serving if you’re preparing this cake roll in advance. This ensures a fresh, appealing presentation.
- For a truly smooth frosting, ensure your cream cheese is very soft, and the cottage cheese is fully blended into a smooth consistency. Any small curds will affect the final texture.
- If you find your cake cracking during the initial roll, it might be slightly overbaked. Next time, try reducing the baking time by a minute or two.
