- Place the grated apple and carrot on top of two pieces of paper towel and squeeze out as much excess moisture as you can. This step is crucial for preventing soggy muffins.
- Measure out 1/2 cup of the shredded apples and 1/2 cup of the shredded carrots and place them into a medium-sized bowl along with all the other dry ingredients (flour, coconut sugar, shredded coconut, pecans, cinnamon, raisins, flax seed, nutmeg, baking soda). Mix these dry ingredients thoroughly to combine.
- In a large bowl, crack and whisk the two large eggs until lightly beaten. Then, add the maple syrup, applesauce, orange juice, and vanilla extract. Mix again until all the wet ingredients are well incorporated.
