Ingredients
- 1/2 cup low sodium soy sauce, or tamari
- 1/3 cup maple syrup
- 1 tablespoon minced garlic
- 2 teaspoons fresh grated ginger
- 2 teaspoon white rice vinegar
- 1.5 lbs. boneless, skinless chicken breast, cut into 1-inch chunks
- 1.5 tablespoons olive oil
- 2 large red peppers, diced
- 4 cups broccoli florets
- 1 tablespoon cornstarch
- 1/4 cup water
- 1 cup raw, whole cashews
Instructions
- First, prepare stir-fry sauce. In a medium bowl, thoroughly mix together soy sauce, maple syrup, minced garlic, grated ginger, and white rice vinegar. Set this sauce aside.
- Next, prepare your chicken breast by slicing it into uniform 1-inch chunks. This ensures even cooking.
- Turn on your Instant Pot’s sauté feature. Once hot, add 1.5 tablespoons of olive oil to the pot.
- When the olive oil is fragrant and shimmering, add the diced chicken breast and cook for 1 to 2 minutes, just enough to lightly brown the chicken on all sides.
- Turn off the sauté feature to prevent scorching. Pour the prepared stir-fry sauce over the chicken and toss to coat thoroughly.
- Securely cover the Instant Pot and turn the valve to the sealing position. Cook on manual high pressure for 4 minutes. The Instant Pot will take a few minutes to build pressure before the 4-minute countdown begins.
- While the chicken is cooking, efficiently prepare your vegetables. Dice 2 large red peppers and cut the broccoli into convenient, bite-sized florets. Set them aside.
- Next, prepare a slurry. In a small bowl, whisk together 1/4 cup of water and 1 tablespoon of cornstarch until smooth. This will help thicken the sauce. Set aside.
- Once the Instant Pot beeps to signal the end of cooking, perform a quick release to rapidly release the built-up steam.
- Carefully remove the lid. Add the chopped bell peppers, broccoli florets, the cornstarch slurry, and raw cashews to the Instant Pot. Gently toss everything together to combine.
- Turn on the Instant Pot’s sauté feature again and cook for approximately 3 minutes, or until the sauce has visibly thickened to your desired consistency.
- Turn off the sauté feature and immediately cover the Instant Pot again for about 5 minutes. This allows the residual heat to steam the vegetables, ensuring they are tender-crisp.
- Remove the lid and check the doneness of your vegetables. If they require more cooking, simply put the lid back on to continue steaming for a few more minutes*. Remember, perfectly cooked veggies are key – avoid overcooking!

- Veggies: If you prefer your vegetables more cooked or prefer a quicker method than steaming, you can always turn the sauté feature back on and cook them directly until tender. We experimented with pressure cooking the veggies on manual high for ‘0 minutes,’ but found they sometimes came out a little too soft. However, this is an option if you like very tender vegetables.
