Key Ingredients for a Flavorful Skillet
The success of any great dish lies in its ingredients. Here’s a closer look at what makes this chicken meatball skillet so special:
- Ground Chicken (or Turkey): We opt for ground chicken for its lean profile and mild flavor, which allows the other ingredients to shine. However, if you prefer, ground turkey works beautifully as well, offering a similar healthy base for your meatballs.
- Panko Breadcrumbs: These are crucial for the meatballs! Panko breadcrumbs are coarser than regular breadcrumbs, which helps create a lighter, crispier texture. They absorb moisture effectively, ensuring your meatballs remain incredibly tender and juicy, even with lean meats like ground chicken.
- Fresh Zucchini: The star of our summer skillet! You’ll want two medium zucchinis for this recipe. For added visual appeal and a touch of variety, I often use one green and one yellow zucchini. They cook down perfectly, adding a subtle sweetness and satisfying texture without becoming watery.
- Chicken Broth: This is the liquid gold that transforms our orzo into a creamy, flavorful base. Don’t be alarmed if the skillet looks a bit watery initially; the orzo will absorb it beautifully as it cooks, infusing every grain with rich chicken flavor. For an even more homemade touch, consider making your own chicken broth.
- Orzo Pasta: This tiny, rice-shaped pasta is ideal for one-pan meals. It cooks directly in the skillet, soaking up all the delicious broth and flavors from the meatballs and vegetables, creating a wonderfully cohesive dish.
- Zesty Lemon Juice & Zest: Fresh lemon juice and zest are essential for brightening the entire dish, adding a tangy, aromatic lift that perfectly complements the rich flavors and cuts through any heaviness.
- Creamy Heavy Cream: A small amount of heavy cream adds a touch of luxurious richness and helps create a silky, smooth sauce that coats the orzo and meatballs beautifully.
- Parmesan & Burrata Cheese: The ultimate finishing touch! Grated Parmesan offers a salty, umami kick, while a generous ball of creamy burrata, melting into the warm dish, adds an unparalleled richness and indulgence that truly elevates this skillet from great to extraordinary.
- Cherry Tomatoes: These sweet little jewels burst with flavor as they cook, adding a vibrant tang and juicy texture to every bite. They are a quintessential summer ingredient!

Crafting Your Summer Squash Chicken Skillet: A Step-by-Step Guide
This recipe is designed for simplicity, making it accessible even for novice cooks. Follow these easy steps to create a show-stopping dinner:
- Prepare the Chicken Meatballs: In a large mixing bowl, gently combine the ground chicken with panko breadcrumbs, Italian seasoning, egg, sea salt, and minced garlic. Mix just until combined, being careful not to overmix, which can make meatballs tough. Using a 1.5 tablespoon scoop (or simply your hands), form the mixture into uniform meatballs. Heat olive oil in your large skillet over medium-high heat. Sear the meatballs, browning them on two sides for a few minutes until they develop a beautiful golden crust. This step is crucial for building flavor and texture. Once seared, remove the meatballs from the skillet and set them aside; they will finish cooking later with the pasta and sauce.
- Sauté the Aromatic Veggies: In the very same skillet (don’t clean it, those browned bits are flavor!), add another tablespoon of olive oil if needed. Add the diced white onion and a pinch of sea salt, cooking for 2-3 minutes until softened and translucent. Next, introduce the sliced zucchini and halved cherry tomatoes. Sauté for just an additional minute or two until they begin to soften slightly and release their vibrant colors. We want them tender-crisp, not mushy.
- Build the Orzo Base and Simmer: Add the dry orzo pasta directly to the skillet with the sautéed vegetables. Toast the orzo for 1-2 minutes, stirring constantly, until it turns slightly golden. This enhances its nutty flavor. Now, return the partially cooked meatballs to the skillet. Pour in the chicken broth, fresh lemon juice, lemon zest, and heavy cream. Stir everything gently to combine, ensuring the orzo is submerged. Bring the mixture to a gentle boil, then reduce the heat to low, cover the skillet, and let it simmer for 7-10 minutes. The orzo will absorb the liquid and cook through, and the meatballs will finish cooking to perfection.
- Finish with Cheese and Serve: Once the orzo is tender (al dente is ideal!) and most of the liquid has been absorbed, remove the skillet from the heat. The sauce should be creamy and luscious. Immediately top the entire dish with a generous amount of grated Parmesan cheese. For an extra touch of indulgence, tear a large ball of creamy burrata cheese over the center of the skillet. The residual heat will gently melt the burrata, creating a rich, gooey finish. Serve immediately and prepare for rave reviews!

Serving Suggestions to Complete Your Meal
This chicken meatball skillet is a meal in itself, but a few simple additions can elevate the dining experience. I love serving this dish family-style, right in the middle of the table, allowing everyone to help themselves. It pairs beautifully with a crisp, fresh garden salad dressed with a light vinaigrette, offering a refreshing contrast to the rich flavors of the skillet.
For an extra touch that my toddlers absolutely adore (and honestly, so do I!), serve it with some warm, crusty bread or soft breadsticks. They love dunking them into the flavorful sauce to scoop up every last bit of deliciousness. A sprinkle of extra fresh parsley or basil before serving adds a lovely pop of color and herbaceous aroma.
Storing and Reheating Your Skillet Leftovers
One of the best things about this one-pan meal is how well it stores, making it perfect for meal prep or enjoying a second delicious helping. Allow any leftovers to cool completely before transferring them to an airtight container. They will keep fresh in the refrigerator for up to 3 days. For ultimate convenience, if your skillet has a lid, you can store the entire pan directly in the fridge!
To reheat, you can warm individual portions in the microwave until heated through. For larger quantities or to prevent the orzo from drying out, gently reheat the skillet on the stovetop over medium-low heat. Add a splash of extra chicken broth or water to rehydrate the orzo and create a fresh, creamy sauce. Stir occasionally until everything is thoroughly warmed. Avoid overheating to maintain the tender texture of the meatballs and vegetables.
Variations & Pro Tips for Skillet Success
This recipe is incredibly versatile, allowing you to customize it to your taste or what you have on hand. Don’t be afraid to experiment!
Recipe Variations:
- Vegetable Swaps: While zucchini and cherry tomatoes are fantastic, feel free to incorporate other seasonal vegetables. Sliced bell peppers, spinach (stirred in at the very end), quartered mushrooms, or even thinly sliced yellow squash would be delicious additions.
- Protein Alternatives: If you don’t have ground chicken, ground turkey is an excellent substitute. For a vegetarian option, you could use plant-based meatballs or a hearty combination of chickpeas and robust vegetables.
- Cheese Choices: No burrata? No problem! Fresh mozzarella torn over the top will also melt beautifully, or simply double up on the Parmesan for a sharp, salty finish. A sprinkle of feta cheese could add a tangy Mediterranean twist.
- Spice It Up: For a little heat, add a pinch of red pepper flakes with the onions or a dash of cayenne pepper to the meatball mixture.
- Herbaceous Touches: Beyond Italian seasoning, consider adding fresh basil, oregano, or a touch of rosemary to the meatballs or a final garnish of chopped fresh herbs.
Pro Tips for the Perfect Skillet:
- Don’t Overmix Meatballs: When combining the meatball ingredients, mix just until everything is incorporated. Overmixing can lead to tough meatballs.
- Sear for Flavor: Don’t skip browning the meatballs. This step creates a delicious crust and locks in moisture, adding depth of flavor to the entire dish.
- Monitor Orzo Cooking: Orzo cooks relatively quickly. Keep an eye on it during the simmering stage and stir occasionally to prevent sticking. If the liquid absorbs before the orzo is fully tender, add a small splash (¼ cup) of extra broth or water, cover, and continue to simmer until al dente.
- Season to Taste: Taste your sauce before adding the orzo and adjust seasonings as needed. The broth and Parmesan will add saltiness, so be mindful when adding extra.
- Quality Ingredients Matter: Since the ingredients are simple, using fresh, high-quality vegetables and good chicken broth will make a noticeable difference in the final flavor.

Ingredients
Meatballs
- 1 lb. ground chicken
- ½ cup panko breadcrumbs
- 1.5 teaspoons Italian seasoning
- 1 large egg
- ½ teaspoon sea salt
- 1 clove garlic, minced
- 2 tablespoons olive oil
Other Ingredients
- 1 tablespoon olive oil
- ½ large white onion, diced
- ¾ teaspoon sea salt, separated
- 2 medium zucchinis, halved and sliced
- 1 cup halved cherry tomatoes
- 1 cup orzo
- Zest from 2 large lemons
- 1.25 cups chicken broth
- ¼ cup fresh lemon juice
- 2 tablespoons heavy cream
- ¼ cup grated Parmesan cheese
- 4 oz. burrata cheese, for serving
Instructions
-
Mix all of the ingredients for the chicken meatballs in a large bowl until combined. Scoop about 1.5 tablespoons of the mixture into your hands and form a meatball. Repeat until all of the meatballs have been formed. Set aside.
-
Heat olive oil in a large nonstick skillet over medium/high heat. Add the meatballs to the skillet and partially cook the meatballs by browning two sides. Remove them from the skillet, they will be fully cooked later.
-
In the same pan, cook the onion with ¼ teaspoon of salt for 2-3 minutes over medium heat. Add the zucchini and tomatoes and cook for an additional minute.
-
Add the orzo and toast for 1-2 minutes, and then add the lemon zest, broth, lemon juice, heavy cream, and remaining salt. Stir and bring the mixture to a boil, and then reduce the heat to low. Add the meatballs to the dish and cover. Simmer for 7-10 minutes or until the orzo is cooked and the liquid is mostly absorbed.*
-
Once the orzo is cooked through and the meatballs are fully cooked, remove from the heat. Top with parmesan cheese and serve immediately.
Tips & Notes
- In step 4, if the liquid is absorbed but the orzo is still crunchy, add ¼ cup more of broth, stir, and allow the mixture to simmer until the orzo is cooked through.
- I used zucchini and cherry tomatoes, but feel free to use your favorite garden vegetables.
- For best results, use a large, heavy-bottomed skillet that can comfortably hold all ingredients and has a tight-fitting lid.
