But the goodness doesn’t stop there; it’s also generously loaded with vibrant vegetables like earthy mushrooms, aromatic onions, and crisp green peppers, all nestled within the wholesome quinoa base. Essential Ingredients for Your Chicken Parmesan Quinoa Casserole

Crafting this mouth-watering quinoa bake begins with a foundation of fresh, high-quality ingredients. For the hearty and flavorful base, we meticulously combine fluffy quinoa with finely diced green bell pepper, savory mushrooms, and aromatic yellow onion. These ingredients not only add incredible texture but also infuse the casserole with essential vitamins and fiber, transforming a simple grain into a vibrant, vegetable-rich experience.

The heart of this casserole’s flavor comes from its rich and comforting sauce. We create a harmonious blend of luscious marinara sauce, robust chicken broth, and pungent minced garlic. This trifecta creates a deeply flavorful and aromatic liquid that perfectly cooks the quinoa, ensuring every bite is infused with classic Italian-inspired taste. This savory base provides the perfect bed for our star ingredient: the parmesan-coated chicken breast.

For the chicken parmesan component, we utilize tender chicken breasts, which are expertly coated in a homemade parmesan breading. This breading, a delightful mix of flour, shredded parmesan, garlic powder, and black pepper, creates a crispy, golden crust that seals in the chicken’s natural juices, delivering that quintessential chicken parmesan experience right on top of your healthy quinoa casserole. The homemade touch elevates the flavor and ensures you know exactly what goes into your meal.

Exciting Variations for Your Chicken Parmesan Quinoa Casserole

One of the many joys of cooking is the ability to customize dishes to suit individual tastes and dietary needs. This Chicken Parmesan Quinoa Casserole is incredibly versatile, offering plenty of room for creative modifications. Here are some fantastic variations to inspire you:

  • Vegetarian Friendly: For a delightful meat-free version, simply replace the chicken with thick slices of sautéed eggplant or large portobello mushroom caps. Ensure your eggplant slices are lightly salted and pressed to remove excess moisture before sautéing for a firmer texture. The cooking time for the quinoa base remains the same, ensuring that fluffy, perfectly cooked grain every time. You might also consider adding a layer of fresh spinach or zucchini.
  • Gluten-Free Adaptation: Making this casserole gluten-free is incredibly simple. Just opt for a high-quality gluten-free all-purpose flour blend when preparing the parmesan coating for your chicken. Most gluten-free flour blends work wonderfully for breading, ensuring you still achieve that desirable crispy exterior without compromising on taste or texture. Always check your marinara and chicken broth labels to confirm they are also gluten-free.
  • Cheese Lovers’ Paradise: While classic parmesan cheese provides a wonderfully sharp and savory flavor, you can elevate the cheesy goodness by experimenting with different varieties. For an extra gooey and stretchy texture, swap shredded parmesan for a mix of half parmesan and half mozzarella. A touch of provolone could also add a fantastic depth of flavor, creating a more complex and indulgent cheese topping.
  • Boost Your Veggies: This casserole is already packed with vegetables, but don’t hesitate to add even more of your favorites! The quinoa base is highly accommodating. Try incorporating finely chopped broccoli florets, zucchini, or sweet peas for added nutrients and color. Other great options include diced bell peppers of different colors, corn, or even a handful of fresh baby spinach stirred into the marinara mix during the last few minutes of baking.
  • Spice It Up: If you enjoy a bit of heat, consider adding a pinch of red pepper flakes to the marinara sauce, or even a diced jalapeño to the sautéed vegetables.

Frequently Asked Questions About Chicken Parmesan Quinoa Casserole

Can I use a different grain instead of quinoa?

While we highly recommend quinoa for its superior nutritional profile and fluffy texture, you could experiment with other grains. We haven’t extensively tested other options for this specific recipe. However, a similar outcome in terms of liquid absorption might be achieved with a quick-cooking rice, such as basmati or jasmine, if you adjust the liquid ratio accordingly. Keep in mind that cooking times and final textures will vary significantly, and the protein content might be different.

How can I make this casserole spicier?

If you love a little heat, it’s very easy to add a spicy kick to this casserole! Simply stir in a generous pinch (or more, to taste) of red pepper flakes directly into the marinara sauce before combining it with the quinoa and vegetables. For an even more intense flavor, you could sauté a finely diced jalapeño or a pinch of cayenne pepper with the onions and green peppers.

Can I use store-bought marinara sauce for convenience?

Absolutely! Using a high-quality store-bought marinara sauce is a fantastic time-saver and perfectly acceptable for this recipe. It streamlines the cooking process without sacrificing flavor. However, if you have the time, preparing your own homemade marinara sauce can provide an extra layer of freshness and depth, elevating the overall taste of the casserole to gourmet levels. Just be sure to choose a brand you love!

Do I need to rinse the quinoa before cooking?

Yes, we strongly recommend rinsing quinoa thoroughly under cold running water before cooking. Quinoa has a natural coating called saponin, which can impart a bitter, soapy taste if not removed. Rinsing helps to eliminate this, ensuring your quinoa is light, fluffy, and delicious in the casserole.

What’s the best way to ensure the chicken is perfectly cooked?

For perfectly cooked, juicy chicken, always use a meat thermometer. Chicken breasts should reach an internal temperature of 165°F (74°C) to be safe to eat. Insert the thermometer into the thickest part of the chicken, avoiding the bone. This prevents overcooking, which can lead to dry chicken, and ensures food safety.

Storage and Meal Prep Tips for Your Casserole

This Chicken Parmesan Quinoa Casserole is a dream for meal prep and makes fantastic leftovers! To store any remaining portions, simply transfer them to an airtight container and refrigerate for up to 3 days. The flavors actually have a chance to meld and deepen over time, often tasting even better the next day!

For longer storage, this casserole freezes exceptionally well. Allow the casserole to cool completely before transferring individual portions into freezer-safe containers or a large freezer bag. It can be stored in the freezer for up to 3 months. When you’re ready to enjoy, make sure to thaw it completely in the refrigerator overnight before reheating. You can reheat individual servings in the microwave, or cover the entire casserole and warm it in the oven at 350°F (175°C) until heated through, adding a splash of broth if it seems dry.

Perfect Serving Suggestions to Complement Your Casserole

While our Chicken Parmesan Quinoa Casserole is a complete meal on its own, a few thoughtful additions can perfectly round out your dining experience. Here are some ideas to enhance your meal:

  • Pair this rich and hearty casserole with a crisp, refreshing green salad. A simple mixed greens salad with a light vinaigrette will provide a lovely contrast in texture and flavor, adding freshness and an extra boost of greens to your meal.
  • Before serving, elevate the visual appeal and taste with simple garnishes. A sprinkle of fresh basil or chopped parsley adds a vibrant pop of color and a fresh, aromatic lift. A light drizzle of balsamic glaze can introduce a touch of sweet and tangy complexity, while a dash of red pepper flakes will deliver a subtle, welcome warmth.
  • Consider serving with a side of steamed or roasted asparagus, green beans, or broccoli for extra vegetable goodness.
  • For a touch of elegance, offer warm, crusty bread or garlic knots on the side, perfect for soaking up any leftover marinara sauce.

Baked chicken breasts with cheese on a bed of tomato sauce, garnished with parsley and grated cheese, in a white dish.

Ingredients

  • 2 tablespoons olive oil
  • 1/2 large yellow onion, diced (~1/2 cup)
  • 1 medium green pepper, diced
  • 8 oz. white mushrooms, diced
  • 1.5 teaspoons sea salt, separated
  • 3 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 cup white quinoa
  • 3 cups marinara sauce, (24 oz.)
  • 1 cup chicken broth, or vegetable broth
  • 2.5 tablespoons all-purpose flour, or g/f all-purpose
  • 1.5 cups shredded parmesan cheese, plus more for topping
  • 2.5 teaspoons garlic powder
  • ½ teaspoon freshly ground pepper
  • 1 large egg
  • 1.5 lbs. boneless, skinless chicken breasts, (4 small chicken breasts)

Instructions

  • Preheat oven to 375ºF and lightly grease a 9×13-inch casserole dish.
  • Heat the olive oil in a large skillet over medium-high heat. Add the diced onion to the skillet and season with ¼ teaspoon of salt. Sauté for 1-2 minutes until softened. Incorporate the green pepper, mushrooms, and minced garlic into the pan. Reduce the heat to medium, add an additional ½ teaspoon of salt, and 1 tablespoon of Italian seasoning. Sauté for an additional 5-7 minutes, or until vegetables are tender. Remove from the heat.
A pan with diced green bell pepper, onion, and mushroom being sautéed with a wooden spoon.
  • Add the rinsed quinoa and the sautéed vegetables to the prepared casserole dish and toss gently to combine. Next, pour in the marinara sauce, chicken broth, and the remaining salt. Stir once more to ensure everything is evenly distributed. Carefully wipe any sauce from the edges of the casserole dish to prevent burning during baking.

  • Cover the casserole dish tightly with aluminum foil and bake in the preheated oven for 30 minutes.
  • While the quinoa mixture bakes, begin preparing the chicken. In a medium-sized bowl, combine the all-purpose flour, shredded parmesan cheese, garlic powder, and freshly ground black pepper. In a separate shallow bowl, crack and whisk the large egg.
  • Take each chicken breast and dredge it through the whisked egg, ensuring it is fully coated. Lift the chicken and allow any excess egg to drip back into the bowl.

  • Next, dredge the egg-coated chicken breast through the parmesan mixture. Press and pat the flour and cheese mixture onto the chicken firmly until it is thoroughly coated on all sides. Repeat this process for all chicken breasts. Depending on the size of your chicken breasts, you may need to add more flour or cheese to the bowl to ensure adequate coating for all pieces.

  • After the initial 30 minutes of baking, carefully remove the casserole dish from the oven. Stir the quinoa mixture to ensure even cooking. Arrange the breaded chicken breasts on top of the quinoa base. Cover the dish again with aluminum foil and return to the oven to bake for an additional 20 minutes.
Four uncooked chicken breasts covered in grated cheese are placed on top of a layer of tomato sauce in a white baking dish.
  • Finally, remove the foil from the baking dish. Continue to bake for an additional 10-15 minutes, or until the chicken is beautifully golden brown and reaches an internal temperature of 165ºF (74ºC) as measured with a meat thermometer. This step ensures the chicken is cooked through and the cheese on top is melted and bubbly.
  • Once baked to perfection, remove the casserole from the oven and let it rest uncovered for 5 minutes before serving. This brief resting period allows the juices in the chicken to redistribute, ensuring a tender and flavorful experience. Garnish with fresh herbs if desired and enjoy!

Tips & Notes

  • This recipe was updated in October 2024. The original recipe (HERE) skips pre-cooking all the vegetables in the skillet. Feel free to skip that step if you want less dishes. We suggest pre-cooking the vegetables because it adds a ton of flavor and depth to the recipe and ensures they are tender.
  • Cook-time may vary depending on your specific oven. Always monitor your casserole and adjust baking times as needed to ensure the chicken is cooked through and the quinoa is tender.
  • For an extra crispy chicken crust, you can briefly broil the casserole for 1-2 minutes at the very end, keeping a close eye on it to prevent burning.
