Essential Ingredients for Your Green Bean Bundles

Crafting these incredibly flavorful bacon wrapped green beans requires just a handful of fresh, wholesome ingredients. Opting for quality ingredients will undoubtedly enhance the final taste and texture of your dish. Here’s what you’ll need to gather:

  • Thick-Cut Bacon: The star of the show! Thick-cut bacon provides a substantial, satisfying chew and ensures it crisps up beautifully without burning too quickly. You’ll need about 1 pound, which typically yields 10-12 strips.
  • Fresh Green Beans: Look for firm, bright green beans without any blemishes. Freshness is key for that perfect crisp-tender bite. Approximately 1 pound, rinsed and trimmed.
  • Balsamic Vinegar: Adds a delightful tangy sweetness that cuts through the richness of the bacon, elevating the overall flavor profile.
  • Fresh Thyme & Rosemary: These aromatic herbs infuse the green beans with a warm, earthy essence, complementing the bacon wonderfully. Minced fresh herbs are always preferred for maximum impact.
  • Parmesan Cheese: A sprinkle of shredded Parmesan adds a salty, umami depth and a lovely golden crust when baked.
  • Olive Oil: Essential for coating the green beans and helping the seasonings adhere, as well as assisting in the cooking process.
  • Salt & Ground Pepper: Basic seasonings to enhance the natural flavors of the green beans and bacon. Adjust to your personal preference.

Creative Substitutions & Delicious Variations

While the classic bacon wrapped green bean recipe is a timeless favorite, don’t hesitate to experiment with these exciting twists to suit your palate or ingredients on hand:

  • Bacon Alternatives: For a touch of sweetness, consider using brown sugar bacon. The caramelization creates a delightful sweet, salty, and savory flavor combination that is absolutely divine. If you prefer a bolder, spicier kick, cracked pepper bacon is an excellent choice. You could also try thinly sliced pancetta for a slightly different cured pork flavor.
  • Veggie Swaps: Green beans are fantastic, but these bundles are also delicious with other vegetables. Replace green beans entirely with fresh asparagus for bacon wrapped asparagus – another popular and equally impressive side. Thinner vegetables like trimmed carrots or even thicker slices of bell pepper could also work.
  • Cheese Options: If Parmesan isn’t your preference, feel free to substitute with any shredded hard cheese that melts well. Options like Pecorino Romano, Gruyère, or even a sharp cheddar can offer a different but equally delicious flavor profile. For a creamy touch, a crumbly goat cheese or feta could be added before baking.
  • Herb & Spice Blends: Beyond thyme and rosemary, explore other fresh or dried herbs. Sage, oregano, or a touch of smoked paprika can add new dimensions. A pinch of red pepper flakes can introduce a subtle heat.
  • Sweet & Savory Glaze: Before the final bake, brush the bundles with a mixture of maple syrup and a touch of Dijon mustard for an irresistible sweet and savory glaze. Alternatively, a sprinkle of brown sugar over the bacon during the second bake will caramelize beautifully.

Frequently Asked Questions About Bacon Wrapped Green Beans

FAQ

Do you have to pre-cook the bacon?

Absolutely, pre-cooking the bacon is a critical step for achieving the perfect texture. This initial 10-minute bake time ensures that the bacon slices are partially cooked, rendering some of their fat. This prevents the bacon from remaining limp and ensures it becomes delightfully crispy by the end of the second bake, without overcooking the green beans. It also helps prevent soggy green beans!

How do you keep green beans green and vibrant?

Our secret to maintaining that beautiful, vibrant green color in your green beans is a quick blanching process. Briefly boiling the trimmed green beans for just 1 minute before assembling the bundles helps lock in their bright color and ensures they are perfectly tender-crisp, not mushy. While this adds a small extra step and an additional pot to wash, the visual appeal and texture are well worth it for an impressive presentation.

Can I use thin-cut bacon instead of thick-cut?

While thick-cut bacon is recommended for its substantial texture and ability to crisp evenly without burning, you can use thin-cut bacon. If using thin-cut, you might need to reduce the initial pre-bake time slightly (to around 5-7 minutes) to prevent it from becoming too crispy or burnt during the second bake. Keep a close eye on it!

What’s the best way to prevent the bundles from falling apart?

To ensure your bacon wrapped green bean bundles stay perfectly intact during baking, especially if the bacon isn’t holding them tightly, a simple toothpick can be your best friend. Insert one or two toothpicks through the bacon and green beans to secure each bundle. Just remember to remove them before serving!

Step-by-Step Guide to Perfect Bacon Wrapped Green Beans

Achieving these golden, crispy bacon wrapped green beans is simpler than you might think. Follow these detailed steps to ensure every bundle is a masterpiece:

1. Prepare the Bacon for Optimal Crispness

  1. Preheat your oven to 400ºF (200ºC). This ensures a hot oven for the bacon to begin cooking effectively.
  2. Line a large baking sheet with foil or parchment paper for easy cleanup, then place a wire rack on top. Arranging the bacon on a wire rack allows air to circulate around each strip, promoting even cooking and helping excess fat drip away, which is crucial for crispiness.
  3. Carefully lay your thick-cut bacon strips on the wire rack, making sure they are not touching each other. Overlapping can lead to uneven cooking.
  4. Bake the bacon for 10 minutes. This initial partial cook renders some of the fat and helps the bacon become pliable enough to wrap, yet firm enough to hold its shape and crisp up perfectly later.

2. Prepare and Season the Green Beans

  1. Optional Blanching for Vibrant Green Beans: For green beans that retain their bright, beautiful color and a tender-crisp texture, consider blanching them. Bring a large pot of salted water to a rolling boil. Add the trimmed green beans and boil for exactly 1 minute. Immediately drain them and plunge into an ice bath (a bowl of ice water) to stop the cooking process. This step is purely for aesthetic and textural perfection but is highly recommended. If you skip this, the green beans will still be delicious but might lose some of their bright green hue. (Note: For the photos in this article, this step was omitted to show the natural color variation).
  2. While the bacon is pre-baking or cooling slightly, place your rinsed and trimmed fresh green beans in a large mixing bowl.
  3. Drizzle the green beans with olive oil and balsamic vinegar. Add the minced fresh thyme, minced fresh rosemary, shredded Parmesan cheese, salt, and ground pepper.
  4. Toss everything together gently but thoroughly, ensuring each green bean is lightly coated with the flavorful mixture. This seasoning forms the delicious foundation for your bundles.

3. Assemble the Savory Green Bean Bundles

  1. Once the bacon has completed its initial 10-minute bake, carefully remove the baking sheet from the oven and set the bacon strips aside on a plate lined with paper towels to absorb any excess grease.
  2. Working with the same baking sheet (after removing the wire rack if used and discarding the excess bacon grease), use a paper towel to lightly spread any remaining bacon grease across the surface. This naturally greases the pan for the second bake, preventing sticking and adding flavor.
  3. Now for the fun part: assembling the bundles! Lay one partially cooked bacon strip flat on your prepared baking sheet or a clean surface. Place a small bundle of 8-10 seasoned green beans across the width of the bacon strip, perpendicular to it.
  4. Carefully roll the bacon strip around the green beans, creating a neat bundle. Ensure the bacon is snug. If you find the bacon isn’t holding the beans together securely, you can use a wooden toothpick to gently secure the ends of the bacon or hold the bundle together. Remember to remove any toothpicks before serving.
  5. Repeat this process for each remaining bacon strip and green bean portion. Arrange all the assembled bundles neatly on the greased baking sheet, leaving a little space between each for even cooking.
  6. If you have any leftover minced herbs or shredded cheese from your initial seasoning, feel free to sprinkle them generously over the assembled green bean bundles for an extra burst of flavor and a beautiful finish.

4. Final Bake Until Golden Perfection

  1. Return the baking sheet with the assembled bacon wrapped green beans to the preheated 400ºF (200ºC) oven.
  2. Bake for approximately 20 minutes, or until the bacon is fully cooked, beautifully browned, and crispy to your liking, and the green beans are tender-crisp. The exact baking time may vary slightly depending on your oven and the thickness of your bacon.
  3. Once baked to perfection, carefully remove the baking sheet from the oven. Let the bundles cool for a few minutes before transferring them to a serving platter. This allows the bacon to firm up slightly and makes handling easier.

Storage & Make-Ahead Tips

While these bacon wrapped green beans are undeniably best enjoyed fresh, with crispy bacon and melted cheese, it’s good to know how to handle leftovers or prepare them in advance.

Storage Guidelines

If you happen to have any leftover green bean bundles, allow them to cool completely before storing. Transfer them to an airtight container and refrigerate for up to 3 days. Reheating typically involves crisping them back up in the oven or an air fryer.

Can You Make Bacon Wrapped Green Beans Ahead of Time?

Absolutely! These green bean bundles are an excellent make-ahead option, perfect for holiday meal prep or entertaining. To prepare them in advance:

  • Complete all the preparation steps up through assembling the green bean bundles. Ensure the bacon is partially cooked and the beans are seasoned and wrapped.
  • Arrange the unbaked bundles in a single layer in an airtight container or on a baking sheet covered tightly with plastic wrap.
  • Store them in the refrigerator for up to 2 days.
  • When you’re ready to serve, simply transfer the assembled bundles to a greased baking sheet. Bake at 400ºF (200ºC) for approximately 20 minutes, or until the bacon is fully cooked, nicely browned, and crispy.

We do not recommend freezing bacon wrapped green beans, as the texture of both the bacon and green beans can degrade significantly upon thawing and reheating.

bacon wrapped green beans

Ingredients

  • 1 lb. thick-cut bacon (10-12 strips)
  • 1 lb. fresh green beans, rinsed and trimmed
  • 1 tablespoon olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon minced fresh thyme
  • 1 tablespoon minced fresh rosemary
  • 1/4 cup shredded parmesan cheese
  • 1/4 teaspoon ground pepper
  • 1/4 teaspoon salt

Instructions

Prepare the Bacon

  1. Preheat oven to 400ºF (200ºC). Place a wire rack on top of a baking sheet. Place the uncooked bacon strips on top of the wire rack – make sure the strips are not touching.
  2. Bake for 10 minutes to partially cook the bacon.

Prepare the Green Beans

  1. Optional extra step for greener green beans: Bring a large pot of water to a boil, then blanch the trimmed green beans for 1 minute. Remove from heat and strain, then immediately plunge into an ice bath to stop cooking. This step will prevent your green beans from losing color. However, it does require another pot and more time. Note: We did NOT do this step for our photos.
  2. Place the trimmed green beans in a large bowl. Add the olive oil, balsamic vinegar, thyme, rosemary, parmesan, salt, and pepper. Toss to combine everything.
  3. Once the bacon has cooked for 10 minutes, remove from the oven and set the bacon strips aside. Working with the same baking sheet (after removing the wire rack), use a piece of paper towel to spread out the bacon grease to grease the pan.

Assemble the Green Bean Bundles

  1. Lay a piece of bacon on the baking sheet and place 8-10 green beans on top (perpendicular to the bacon strip). Roll the bacon up to secure the green beans bundle. Repeat for each bacon strip. Arrange the assembled bundles onto the baking sheet. If you have any leftover herbs and cheese, sprinkle on top of the green beans.
  2. Bake the bacon-wrapped green beans until the bacon is cooked and browned, about 20 minutes.

Tips & Notes

  • Storage: Store leftover bacon wrapped green beans in an airtight container in the refrigerator for up to 3 days.
  • Make Ahead Instructions: Prep everything through assembling the green bean bundles. Store the assembled bundles in an airtight container in the refrigerator for up to 2 days. When ready to serve, transfer them to a greased baking sheet and bake at 400ºF (200ºC) for 20 minutes, until the bacon is cooked and browned.
  • Securing the Bundles: If the bacon wrapped green bean bundles are not as secure as you’d like them to be, use a toothpick to secure them before baking. Remove prior to serving.
  • Choosing Bacon: Thick-cut bacon is highly recommended as it crisps up nicely without overcooking the green beans. Thin-cut bacon can also be used but may require less pre-baking time.
  • Herb Freshness: Fresh herbs provide the best flavor. If using dried herbs, reduce the quantity to about 1/3 of the fresh amount.
