  • Prepare the salmon by patting the fillets thoroughly with a paper towel to remove any excess moisture.
  • Generously season the flesh side of the salmon with salt and pepper. Place a piece of fresh dill on top of each fillet.
  • Transfer each 5-oz. salmon fillet into either individual plastic/vacuum seal bags or one large plastic/vacuum seal bag. We recommend individual bags for best results.
  • Add a good squeeze of lemon juice to each bag with the salmon, then remove all air from the bag and seal it completely.
  • Carefully place the sealed bags into the preheated water bath. Ensure the salmon remains fully submerged, then set your timer for 45 minutes.
