- 3 tablespoons red wine vinegar
- 2 cloves garlic, minced
- 1.5 teaspoons Dijon mustard
- 1.5 teaspoons honey
- ¼ cup olive oil
- ½ teaspoon sea salt
- ½ teaspoon cracked black pepper

In a large bowl, combine the shredded carrots, thinly sliced red onion, drained and rinsed garbanzo beans, halved cherry tomatoes, chopped pepperoncini, matchsticked salami, and crumbled cheese.
