Essential Ingredients for Triple Berry Bliss

Let’s dive into the key ingredients that make these triple berry buns so irresistible:

  • Mixed Berries: I personally love using a frozen mixed berry blend for convenience, but I’ve also tested this recipe extensively with fresh berries, and they work just as beautifully.
  • All-Purpose Flour: AP flour forms the structural base of this dough. It helps create that ideal crispy yet chewy texture when baked to golden perfection. I haven’t tested this recipe (yet!) with gluten-free AP flour or almond flour, but I encourage experimentation!
  • Baking Powder: Since this high-protein dough doesn’t rely on yeast for leavening, baking powder is absolutely essential to give these buns their signature rise. Don’t skip it!
  • Baking Soda: Adding baking soda contributes to the perfectly fluffy texture that makes these buns so enjoyable.
  • Greek Yogurt: This is where the magic happens! I’ve experimented with Skyr yogurt, traditional Greek yogurt, and even blended cottage cheese, and all three delivered fantastic results in terms of both added protein and the perfect level of moisture. I highly recommend trying Painterland Sisters skyr yogurt if you haven’t already – it’s my go-to!
  • Egg: The egg acts as a binder, helping the buns maintain their beautiful shape during baking and giving them a pleasant structure.
  • Maple Syrup: These buns lean towards the sweeter side, so a touch of maple syrup in the dough perfectly complements the berry flavor, creating a harmonious and satisfying taste.

The Secret is in the High-Protein Dough

My go-to high-protein dough recipe is a true kitchen staple! It’s unbelievably easy to make, incredibly versatile, and forms the foundation for countless high-protein creations I’ve developed for Fit Foodie Finds. From my raspberry cottage cheese breakfast cake to my insanely delicious protein bagels, and even my no-rise protein pizza dough, this dough truly does it all!

What’s the Ingredient Breakdown? This high-protein dough calls for just a handful of simple ingredients, and requires ZERO rise time. It’s a simple 1:1 ratio of all-purpose flour and Greek yogurt, along with a few other staples like baking powder, an egg, and maple syrup.

Greek Yogurt vs. Blended Cottage Cheese: Which is Better?

I’ve rigorously tested this recipe using both Greek yogurt and blended cottage cheese. Technically, both work! However, I personally prefer the version made with Greek yogurt or skyr yogurt. Why? Greek yogurt yields a slightly more fluffy texture in the finished buns, whereas cottage cheese tends to produce buns that are a bit more dense and savory.

Top Tips for Perfect Triple Berry Buns

To ensure baking success every time, here are my top tips:

  • Brown Sugar or Maple Syrup: The Choice is Yours! I’ve tested this recipe with both ingredients, and both work flawlessly. The flavor difference is minimal, so feel free to choose your preference based on what you have on hand.
  • Berry Variety: Anything Goes! I’ve successfully baked these buns with frozen mixed berries as well as fresh berries. You can also use a single variety of berry if you prefer a more focused flavor.
