Ingredients

  • 1 tablespoon avocado oil
  • 1 small white onion, minced
  • 1.5 cups carrots, minced
  • 1 lb. ground beef
  • 4 cloves garlic, minced
  • 4 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 8 oz. elbow macaroni
  • 15 oz. tomato sauce
  • 3 cups beef broth
  • 1 cup canned or frozen peas
  • 1 cup cottage cheese
  • 4 oz. shredded cheddar cheese

Instructions

  1. Heat avocado oil in a large pan over medium heat. Add onion and carrot, cook until onions are translucent, about 4 minutes.
  2. Add garlic, tomato paste, and thyme, cook for an additional minute. Add beef and partially cook.
  3. Add noodles, tomato sauce, and broth to the pan. Bring to a boil, then reduce to a simmer. Stir, cover, and cook for 10-15 minutes, or until noodles are al dente.
  4. Remove from heat, stir in peas, cottage cheese, and cheddar. Place the lid back on and let sit for 3-5 minutes.
