Far from being relegated to just dinner or side dishes, this versatile winter squash brings a wealth of benefits and flavor to your first meal of the day. Its naturally sweet, earthy profile pairs beautifully with savory eggs, creating a balanced and incredibly satisfying taste experience.
Beyond its deliciousness, butternut squash is a nutritional powerhouse. It’s an excellent source of dietary fiber, which is crucial for digestive health, promoting satiety, and helping to maintain stable blood sugar levels throughout the morning. This means you’ll feel fuller for longer, avoiding those mid-morning energy crashes. Furthermore, butternut squash is brimming with potassium, an essential electrolyte vital for muscle function, nerve signals, and maintaining healthy blood pressure.
But the benefits don’t stop there. Butternut squash is also exceptionally rich in vitamins. It’s packed with Vitamin A, primarily in the form of beta-carotene, which is crucial for vision, immune function, and skin health. You’ll also find a good dose of Vitamin C, a powerful antioxidant that supports your immune system and collagen production. When you crack an egg into this nutrient-dense squash, you’re not just enjoying a tasty meal; you’re fueling your body with protein, healthy fats, and a spectrum of vitamins and minerals. It’s a simple, elegant, and incredibly effective way to ensure you’re off to a running start, feeling energized and ready to tackle the day ahead!
Mastering the Butternut Squash Egg in a Frame: Expert Tips for Success
We absolutely adore the classic “egg in a frame” concept, and this innovative twist, using a slice of wholesome butternut squash instead of traditional toast, is a game-changer. Don’t be intimidated by preparing the butternut squash; it’s simpler than you might think! We’ve gathered some invaluable pro tips to guide you through the process, ensuring your Butternut Squash Egg in a Frame turns out perfectly every time.
- Effortless Peeling: Removing the tough skin of butternut squash can sometimes feel daunting. We highly recommend using a high-quality vegetable peeler for this task. It’s significantly easier, faster, and much safer than attempting to peel with a knife, minimizing the risk of slips or cuts. Prioritize safety and efficiency in your kitchen prep!
- Crafting the Perfect Egg Cavity: After slicing your butternut squash, you might notice that the natural “hole” from the seed cavity isn’t quite large enough to comfortably cradle an egg. This is perfectly normal! If your squash slices have smaller openings, simply use a sharp paring knife or even a small biscuit cutter to carefully enlarge the hole. Aim for a size that will hold your egg snugly without overflowing, ensuring an ideal cooking surface.
- Egg-squisite Versatility: While we love a perfectly fried or baked egg in our butternut squash frame, feel free to adapt the recipe to your preferred egg preparation. If you’re a fan of scrambled eggs, simply whisk your egg in a bowl with a pinch of salt and pepper before gently pouring it into the butternut squash cavity. This allows for a different texture and can be a great option for those who prefer a more cohesive egg component. You could even try a soft-poached egg nestled gently on top of the roasted squash for an extra touch of gourmet elegance.
- Uniform Slices are Key: For even cooking, strive to cut your butternut squash into slices of similar thickness, approximately 1/2 to 3/4 inch thick. This ensures that each “frame” bakes at the same rate, resulting in perfectly tender squash and evenly cooked eggs across your batch.
- Seasoning Matters: Don’t forget to season your butternut squash generously before baking. A good sprinkle of salt and freshly ground black pepper will enhance its natural sweetness and savory notes, creating a more flavorful base for your egg. Consider adding a pinch of paprika or a dash of garlic powder for an extra layer of taste!

Prep Time: 10 mins
Cook Time: 20 mins
Total Time: 30 mins
Servings: 2

Ingredients
- 1/2 large butternut squash, cut “hamburger style” from the seeded half
- 1/2 tablespoon avocado oil (or olive oil)
- 4 large eggs
- Salt, to taste
- Pepper, to taste
Instructions
- First, preheat your oven to 375ºF (190ºC).
- Begin preparing your butternut squash “bread.” Peel the butternut squash and slice it in half “hamburger style” (crosswise). You will be working with the half that contains the seeds; set the other half aside for other recipes.
- Cut the seeded half of the butternut squash in half again lengthwise, opening it up to easily remove the seeds. Scoop out and discard the seeds.
- Next, form your butternut squash “frames” by slicing the seeded half into four even, circular pieces, approximately 1/2 to 3/4 inch thick. The remaining squash can be diced and saved for other delicious butternut squash recipes later in the week.
- Place the butternut squash “frames” on a baking sheet. Drizzle or rub them evenly with avocado oil, then season generously with salt and freshly ground black pepper.
- Bake in the preheated oven for 15 minutes.
- Carefully remove the baking sheet from the oven and gently flip each butternut squash slice to the other side.
- Using a small knife or a spoon, gently enlarge the hole in the center of each squash slice if needed, creating enough space for an egg.
- Crack one large egg directly into the center of each butternut squash frame.
- Return the baking sheet to the oven and continue baking for another 10-15 minutes, or until the eggs have reached your desired level of doneness (from runny yolk to firm).
Tips & Notes
- If the natural hole in your butternut squash slice is too small for an egg, use a knife or a small round cookie cutter to carefully enlarge it.
- Keep a close eye on your eggs during the final baking stage to avoid overcooking them, especially if you prefer a runny yolk.
- For an extra flavor boost, sprinkle a pinch of smoked paprika or fresh herbs like chives or parsley over the finished eggs.
