  3. In a separate bowl, whisk together all the wet ingredients for the oatmeal base: smashed banana, eggs, vanilla extract, maple syrup, and unsweetened oat milk. Pour this wet mixture into the dry ingredients and mix until just combined, being careful not to overmix.
  4. Transfer the oatmeal batter to your prepared 8×8-inch baking dish. Bake at 350ºF (175ºC) for approximately 30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out mostly clean. If the center is still unset, cover loosely with foil and bake for another 5-10 minutes.

  5. Remove the baked oatmeal from the oven and let it cool in the dish for at least 5-10 minutes. This allows it to set properly before slicing.
  6. While the oatmeal bake is cooling, prepare the tres leches sauce. In a small saucepan, combine evaporated milk, 2% milk, oat milk, maple syrup, and ground cinnamon. Heat over medium heat, stirring, until it reaches a gentle simmer. Remove from heat immediately.

  7. Slice the cooled oatmeal bake into squares. Serve each square in a bowl or on a plate, generously drizzling 1-2 tablespoons of the warm tres leches sauce over it.
