Savory Oats
- 2 teaspoons olive oil
- 1 tablespoon minced onion
- 1 teaspoon minced garlic
- 1.5 cups rolled oats
- 1 cup beef broth
- 2 cups water
- 1 tablespoon maple syrup
Mushrooms & Topping
- 1 tablespoon olive oil
- 8 oz. white mushrooms, sliced
- 1 tablespoon minced onion
- 1/8 teaspoon salt
- 3 sage leaves
- 4 large eggs
- 1/4 cup raw pepitas, or any kind of nut
- 1/4 cup goat cheese crumbles, or Boursin
Instructions

Add 2 teaspoons of olive oil to a medium pot and heat over medium-high heat. When the olive oil is fragrant, add 1 tablespoon of minced onion and 1 teaspoon of minced garlic. Sauté for 2 minutes, stirring occasionally, until softened and aromatic. This creates the flavorful base for your oatmeal.

Next, add 1.5 cups of rolled oats to the pot and toast over medium heat for 2 minutes, stirring constantly to bring out their nutty flavor. Then, pour in 1 cup of beef broth, 2 cups of water, and 1 tablespoon of maple syrup. Continue heating over medium heat, stirring every so often, and cook for around 10-12 minutes until the oats have thickened and reached a creamy consistency.

While the oatmeal is thickening, prepare the mushroom topping. Heat 1 tablespoon of olive oil in a medium saucepan over medium heat. Add 8 oz. of sliced white mushrooms, 1 tablespoon of minced onion, 1/8 teaspoon of salt, and 3 fresh sage leaves. Sauté for around 8-10 minutes, stirring occasionally, until the mushrooms are cooked down and nicely browned. Before serving, remove and discard the sage leaves.

In the same pan used for the mushrooms (or a separate skillet), add a little more olive oil if needed. Fry 4 large eggs to your desired yolk consistency. A runny yolk is highly recommended for adding a rich, creamy element to the oatmeal.
