Key Ingredients for a Perfect Mediterranean Corn Salad
The secret to this salad’s irresistible flavor lies in the quality and freshness of its components. Here’s a closer look at the star ingredients:
- Sweet Corn: The cornerstone of this dish. We highly recommend using fresh sweet corn cut directly off the cob when it’s in season. Its natural sweetness and crisp-tender texture are simply unparalleled, especially when caramelized. If fresh corn isn’t available, high-quality frozen corn works well – just ensure it’s fully thawed and any excess moisture is drained to prevent a watery salad. - Cucumbers: These provide that essential fresh, crisp crunch that’s so integral to Mediterranean cuisine. Whether you opt for English, Persian, or standard garden cucumbers, slice them into half-moons for an appealing texture and easy eating. Their cool, refreshing quality perfectly balances the richness of other ingredients.
- Feta Crumbles: The tangy, salty, and crumbly goodness of feta is non-negotiable for that authentic Mediterranean flavor. Its distinct taste adds a wonderful depth and creaminess. If you don’t have feta on hand, cotija cheese or crumbled goat cheese can offer a similar salty, tangy profile, though the flavor will be slightly different.
- Kalamata Olives: We are proudly on team olives! These briny, rich olives add a deep, savory note that complements the other vibrant flavors beautifully. If olives aren’t your preference, feel free to omit them. However, you might want to add an extra pinch or two of sea salt to the salad, as the olives contribute significant saltiness.
- Red Onion: A finely diced red onion adds a welcome sharp, pungent bite and a beautiful pop of color. Its intensity contrasts wonderfully with the sweetness of the corn. If you find raw red onion too strong, you can soak it in a bowl of ice water for 10-15 minutes, then drain thoroughly, to mellow its flavor.
- Sun-Dried Tomatoes (in oil): These concentrated gems bring an intense burst of umami and a chewy texture to the salad. Packed in oil, they also contribute to the richness and depth of flavor, making them a Mediterranean pantry essential.
- Cherry Tomatoes: Halved cherry tomatoes burst with fresh, juicy sweetness and vibrant color. They add another layer of acidity and freshness, making each bite lively.
- Fresh Herbs (Mint & Basil): These aromatic herbs are the soul of Mediterranean cooking. Fresh mint provides a cooling, refreshing counterpoint, while basil offers a sweet, peppery aroma. Don’t skimp on these; they elevate the salad from good to extraordinary.
The Simple Homemade Vinaigrette
A great salad is nothing without its dressing, and ours is perfectly balanced to highlight the fresh ingredients without overpowering them. It’s a classic combination that you’ll want to keep on hand:
- Olive Oil: A good quality extra virgin olive oil forms the base, providing a fruity, peppery richness.
- Red Wine Vinegar: This adds a sharp, tangy acidity that brightens the entire salad.
- Fresh Lemon Juice: A squeeze of fresh lemon juice adds another layer of bright, citrusy tang, enhancing the flavors of the vegetables and herbs.
Together, these ingredients create a light yet flavorful dressing that coats every component perfectly, ensuring a harmonious taste in every forkful.

- Add Protein: Boost the protein content by adding grilled chicken, chickpeas, white beans, or even some crumbled firm tofu.
- Extra Veggies: Incorporate other seasonal vegetables like diced bell peppers (red, yellow, or orange for color), thinly sliced zucchini, or roasted red peppers.
- Different Cheeses: While feta is traditional, you could experiment with shaved Parmesan, goat cheese (if not used as a feta substitute), or even small mozzarella balls (bocconcini).
- Grain Boost: For a heartier meal, stir in some cooked quinoa, couscous, or farro to make it a more substantial main dish.
- Spicy Kick: A pinch of red pepper flakes or a finely diced jalapeño can add a touch of heat if you enjoy a little spice.
- Herb Swap: While mint and basil are classic, feel free to try other fresh herbs like parsley or dill for a slightly different flavor profile.
Tips for Storing and Enjoying Leftovers
This Mediterranean corn salad is fantastic for meal prep and keeps beautifully! To maximize freshness and flavor, store any leftovers in an airtight container in the refrigerator. It will stay delicious for up to 5 days. The flavors often meld and deepen overnight, making it even tastier the next day.
Before serving leftovers, we recommend adding a fresh sprinkle of crumbled feta and a handful of freshly chopped herbs (mint or basil) and giving it a good toss. This simple trick will instantly brighten up the salad, making it taste freshly made. If the dressing seems to have settled, a quick stir or an extra drizzle of olive oil and a splash of lemon juice can revitalize it.

Prep Time: 25 minutes

Total Time: 34 minutes
Servings: 8

Ingredients
Salad
- 1.5 tablespoons avocado oil
- 20 oz. frozen corn, thawed and drained (or 3-4 ears fresh corn, kernels cut off)
- ¾ teaspoon sea salt, separated
- 4 mini cucumbers, sliced into half moons (or 1 large English cucumber, sliced) (~1.5 cups)
- ½ medium red onion, finely diced
- ⅓ cup chopped sun-dried tomatoes in oil, drained
- 1 cup chopped cherry tomatoes, halved or quartered
- ½ cup chopped kalamata olives, pitted
- 4 oz. feta crumbles
- ¼ cup chopped fresh mint
- ¼ cup chopped fresh basil
Dressing
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- ½ tablespoon fresh lemon juice
Instructions
-
In a large skillet, heat the avocado oil over medium-high heat until shimmering. Add the corn kernels and season with ¼ teaspoon of sea salt. Sauté the corn for 6-9 minutes, stirring occasionally, until the kernels begin to caramelize and develop a beautiful golden-brown color. This step enhances their sweetness and adds a wonderful depth of flavor. Remove the corn from the heat and set aside to cool.

Caramelizing the corn to perfection. -
While the corn cools, prepare the rest of the salad components. In a large salad bowl, combine the sliced cucumbers, finely diced red onion, chopped sun-dried tomatoes, halved cherry tomatoes, and crumbled feta cheese. In a separate small bowl, whisk together the olive oil, red wine vinegar, fresh lemon juice, and the remaining ½ teaspoon of sea salt to create your vinaigrette. Pour the dressing over the vegetables in the large bowl.

Pouring the homemade vinaigrette over the fresh ingredients. -
Once the caramelized corn has cooled to room temperature, add it to the salad bowl with the other ingredients. Add the chopped kalamata olives, fresh mint, and fresh basil. Gently toss everything together until all ingredients are well combined and coated in the vibrant dressing. Serve immediately for optimal freshness, or transfer the salad to the refrigerator to chill for at least 30 minutes before serving, which allows the flavors to meld beautifully.

Mixing all the components for the perfect Mediterranean Corn Salad.
Tips & Notes
- Corn Selection: While fresh corn is best, quality frozen corn is a great alternative. Ensure it’s fully thawed and patted dry before caramelizing to achieve the best texture and browning.
- Cucumber Prep: Any type of cucumber works well. For larger varieties, make sure to slice them into half-moons or dice them into bite-sized pieces for easier eating and better integration into the salad.
- Mellowing Red Onion: If you find raw red onion too strong, dice it and soak in cold water for 10-15 minutes, then drain and pat dry before adding to the salad. This reduces its pungency.
- Make Ahead: This salad tastes even better after the flavors have had a chance to meld. You can prepare it a few hours in advance, keeping the fresh herbs and feta separate until just before serving for ultimate freshness.
