Pro Tips for a Perfectly Cooked Orange Chicken Casserole

Achieving a perfectly cooked casserole with tender rice and juicy chicken is simpler than you think. Follow these tips for the best results:

Choosing Your Rice: Can I use a different kind of rice?

While jasmine rice is our preferred choice for its fragrance and texture, almost any kind of long-grain white rice will work wonderfully in this casserole. Avoid using quick-cooking or instant rice, as their cooking times and liquid absorption rates differ significantly and may lead to a mushy or undercooked result. Brown rice can also be used, but it will require a longer baking time and possibly more liquid.

Ensuring Tender Rice: Why is the rice still crunchy after I bake the casserole?

The secret to perfectly tender, fluffy rice in this casserole lies in one crucial step: allowing the casserole to rest. After removing it from the oven, resist the urge to peek! Let the casserole sit, still covered, for at least 15 minutes. This vital resting period allows the rice to fully absorb any remaining liquid, steam to perfection, and achieve that ideal tender texture. Without this step, your rice might indeed remain a bit crunchy.

Customize Your Casserole: Veggie Add-In Ideas

One of the joys of making a casserole is its adaptability. Feel free to make this Orange Chicken Casserole your own by incorporating additional vegetables or experimenting with different protein sources. Here are some fantastic ideas to get you started:

  • Bell Pepper: Sliced red, yellow, or orange bell peppers add a sweet crunch and a pop of color.
  • Cauliflower: Small cauliflower florets can be a great addition, offering a mild, earthy flavor.
  • Mushrooms: Sliced cremini or button mushrooms bring an umami richness to the dish.
  • Pea Pods: Snap pea pods or snow pea pods can be added during the last 10-15 minutes of baking for a fresh, crisp texture.
  • Carrots: Diced carrots add sweetness and extra nutrients.
  • Water Chestnuts: For an extra layer of crunch, stir in some sliced water chestnuts.

Don’t be afraid to mix and match to discover your favorite combinations!

Mastering Meal Prep: Storage & Reheating

This healthy orange chicken casserole isn’t just a delicious dinner; it’s a fantastic candidate for meal prepping, ensuring you have easy, wholesome meals ready to go throughout your busiest weeks. Prepare a large batch on a Sunday, and you’ll be set for grab-and-go lunches or quick dinners, minimizing cooking stress during the week.

Refrigerator Storage: Leftovers can be stored in an airtight glass container for up to 5 days in the refrigerator. Glass containers are ideal as they prevent staining and keep food fresher longer.

Freezer Storage: For longer storage, allow the casserole to cool completely before transferring individual portions to freezer-safe containers. It can be frozen for up to 3 months. Thaw overnight in the refrigerator before reheating.

To Reheat: Reheat individual portions of your casserole in the microwave on high for 60-90 seconds, or until heated through. For best results and to prevent drying out, you can add a tablespoon of water or chicken broth before reheating.

Ingredients

For the Casserole

  • 1.5 lbs. boneless, skinless chicken thighs, cut into ~½ inch chunks (chicken breast works too)
  • 2 tablespoons soy sauce
  • 2 tablespoons orange juice
  • 1 teaspoon garlic powder
  • 2 teaspoons sesame oil
  • 1 cup jasmine rice, uncooked
  • 1/2 medium yellow onion, diced
  • 4 cups chopped broccoli florets

For the Sauce

  • 1.5 cups orange juice
  • 1/4 cup honey
  • 2 cups chicken broth
  • 1/4 cup soy sauce
  • 1 teaspoon fish sauce (optional, for extra umami)
  • 2 tablespoons rice vinegar
  • 4 garlic cloves, minced
  • 1 teaspoon freshly ground ginger
  • 2 tablespoons sriracha (adjust to taste)

Toppings

  • 1-2 teaspoons sesame seeds
  • 3 green onions, chopped

Instructions

  1. Preheat your oven to broil. Place the chicken chunks into a 9×13-inch ceramic casserole dish. Add 2 tablespoons of soy sauce, 2 tablespoons of orange juice, garlic powder, and sesame oil to the chicken. Toss everything thoroughly to ensure the chicken is evenly coated. Let the chicken marinate for 10 minutes to absorb the flavors.

  2. Carefully place the casserole dish under the broiler. Broil the chicken for 2 minutes, then remove, toss the chicken, and broil for an additional 2 minutes. This step helps to brown the chicken and develop a delicious savory crust.

  3. Remove the casserole dish from the oven. Add the uncooked jasmine rice, diced onion, and broccoli florets to the dish with the chicken. Toss all the ingredients together to combine them well.

  4. In a separate bowl, prepare the orange sauce. Pour 1.5 cups of orange juice and 1/4 cup of honey into the bowl. Whisk vigorously until the honey is fully dissolved and no clumps remain. Then, add the remaining sauce ingredients: chicken broth, soy sauce, fish sauce (if using), rice vinegar, minced garlic, freshly ground ginger, and sriracha. Whisk until all ingredients are thoroughly combined.

  5. Pour the prepared orange sauce evenly over the chicken, rice, and vegetable mixture in the casserole dish. Toss gently to ensure that all ingredients, especially the rice, are submerged in the liquid for even cooking.

  6. Reduce your oven temperature to 375ºF (190ºC). Cover the casserole dish tightly with tin foil. Bake in the preheated oven for 30 minutes.

  7. After 30 minutes, remove the casserole from the oven and give it a good stir (it will still appear quite liquidy, which is normal). Re-cover the dish and return it to the oven. Continue baking, covered, for an additional 15-30 minutes, or until the rice is fully cooked and tender, and most of the liquid has been absorbed.

  8. Once baked, remove the casserole from the oven. It is crucial to let it rest. Leave the casserole covered for at least 10-15 minutes without removing the foil. This resting period allows the rice to steam and absorb any remaining moisture, ensuring it’s perfectly fluffy and not crunchy.

  9. Finally, uncover your delicious Orange Chicken Casserole. Garnish generously with sesame seeds and chopped green onions for a fresh, aromatic finish. Serve hot and enjoy!

Tips & Notes

Rice Alternatives: You can absolutely use other types of long-grain white rice for this recipe if jasmine rice isn’t available. However, please avoid germinated rice of any kind, as its cooking properties are different and may not yield the desired results in this casserole.

Veggie Boost: Feel free to customize this dish by adding more vegetables to your liking! Bell peppers, carrots, or even snow peas would be excellent additions. Add harder vegetables at the beginning with the chicken and rice, and softer ones halfway through baking.

Adjusting Consistency: This recipe is designed for a saucier casserole, full of rich flavor. If you prefer a drier, less saucy consistency, simply let the dish rest for an extended period (20-30 minutes) after baking. The rice will continue to absorb more liquid during this time.
