What Exactly is a Harvest Bowl?
At its core, a harvest bowl is a carefully curated, Fall-inspired grain bowl that champions the freshest produce of the season. It typically combines a hearty grain, an assortment of roasted or fresh seasonal vegetables, and a flavorful dressing that ties all the elements together. The beauty of a harvest bowl lies in its ability to be both deeply satisfying and remarkably healthy, offering a complete and balanced meal in a single serving.
Our featured Butternut Squash Harvest Bowl recipe exemplifies this concept, spotlighting key ingredients that truly shine during the autumn and winter months. It expertly balances the sweetness of butternut squash with the robust flavor of Brussels sprouts, the nutty texture of wild rice, and the refreshing crunch of a kale apple slaw, all unified by a luscious tahini dressing. This combination not only provides a diverse range of textures and flavors but also a wealth of essential nutrients, making it a truly nourishing choice for any meal.

Key Elements of a Phenomenal Harvest Grain Bowl
Creating a truly memorable harvest grain bowl is all about harmonious balance – the perfect blend of savory and subtly sweet, with a satisfying array of textures. Each component of this butternut squash harvest bowl contributes uniquely to its overall deliciousness, ensuring every spoonful is an adventure for your taste buds. Let’s delve into the stars of this nutritious and flavorful dish:
Wild Rice: The Hearty Foundation
Wild rice forms the wholesome base of our harvest bowl, offering a wonderfully chewy texture and a distinct, nutty flavor that sets it apart from other grains. While it might seem a bit finicky to cook perfectly, mastering it is a game-changer. Whether you prefer the classic stovetop method or the convenience of an Instant Pot, learning how to prepare wild rice properly ensures it’s never undercooked and hard or overcooked and mushy. A well-cooked batch will be fluffy, separate, and provide a fantastic contrast to the softer vegetables. For those busy days, pre-cooked wild rice is an excellent time-saving option available at most grocery stores, allowing you to enjoy this delicious grain with minimal effort.
Butternut Squash: The Sweet & Earthy Star
Butternut squash is undeniably the star of any fall harvest dish, and this bowl is no exception. Its naturally sweet, earthy flavor and tender texture make it an incredible addition, especially when roasted to perfection. This versatile winter squash is not only delicious but also packed with vitamins A and C, fiber, and antioxidants, contributing significant nutritional value to your meal. While roasting brings out its best caramelized notes, there are several fantastic ways to prepare butternut squash, allowing you to choose the method that best fits your schedule and culinary preference. Brussels Sprouts: Roasted to Perfection
Brussels sprouts, often overlooked, transform into incredibly flavorful and tender bites when roasted. Their slightly bitter edge mellows into a delightful sweetness, creating a complex flavor profile that pairs beautifully with the other ingredients in our harvest bowl. This recipe calls for a simple yet effective roasting method with onion, olive oil, garlic powder, salt, and pepper, which highlights their natural goodness. However, feel free to unleash your culinary creativity! Brussels sprouts are incredibly adaptable, and you can easily incorporate other exciting variations to elevate your bowl. Consider these delicious alternatives:
- Grilled Balsamic Brussels Sprouts: For a smoky twist
- Parmesan Garlic Roasted Brussels Sprouts: An indulgent savory option
- Roasted Brussels Sprouts with Bacon: For a rich, smoky crunch

Kale and Apple Slaw: The Fresh, Crisp Counterpoint
The kale and apple slaw is a crucial component that introduces a refreshing element of sweetness, crunch, and tang to an otherwise savory and hearty bowl. This vibrant slaw provides a fantastic textural contrast and brightens the overall flavor profile. It’s incredibly easy to prepare, combining a few simple yet impactful ingredients:
- Thinly sliced apple: Adds natural sweetness and a crisp bite.
- Baby kale: Provides a nutrient-dense green base with a tender texture.
- Thinly sliced red onion: Delivers a subtle sharp, pungent flavor that cuts through richness.
- Dried cherries or cranberries: Offers concentrated sweetness and a chewy texture.
- Lemon juice, honey, and apple cider vinegar: Form the bright, tangy, and slightly sweet dressing for the slaw.
- Olive oil and a pinch of salt: Round out the flavor and help tenderize the kale.
Simply toss all these ingredients together, and you have a lively, flavorful slaw ready to complement your harvest bowl perfectly. The acidity from the lemon juice and apple cider vinegar also helps to lightly “massage” the kale, making it more tender and palatable.

Tahini Dressing: The Creamy Unifier
No harvest bowl is complete without a stellar dressing to bring all the diverse flavors into a harmonious whole. Our tahini dressing is a true game-changer, offering a rich, nutty, and creamy texture that perfectly complements the roasted vegetables and grains. Made with a simple blend of tahini, olive oil, balsamic vinegar, and garlic powder, whisked together, it provides that essential layer of savory depth and moisture. Tahini, a paste made from ground sesame seeds, is not only delicious but also a good source of healthy fats and minerals.
While this tahini dressing is a perfect match, feel free to personalize your bowl with other dressings you love. There are countless options that would pair wonderfully with the rich autumn flavors of this recipe. Some beloved choices from our kitchen that would enhance these harvest bowls include:

- Pinch of salt
Tahini Dressing
- 2 tablespoons tahini
- 2 tablespoons olive oil
- 1/4 teaspoon garlic powder
- 2 teaspoons balsamic vinegar

Instructions
Wild Rice
- Place wild rice and water into a large saucepan. Turn burner to medium/high heat and bring to a boil.
- Cover and turn heat down to low, then let simmer for 50 minutes or until it reaches the desired texture.
- Strain any remaining water from the wild rice and set the cooked rice aside.
Brussels Sprouts
- While the wild rice is simmering, preheat your oven to 375ºF (190ºC). Place all ingredients for the Brussels sprouts (quartered Brussels sprouts, sliced yellow onion, olive oil, garlic powder, salt, and pepper) onto a baking sheet. Mix everything together until the Brussels sprouts are evenly coated with olive oil and spices.
- Roast for 25 minutes, or until tender and lightly caramelized.
- Remove from the oven and set aside.
Butternut Squash
- Turn on your Instant Pot’s saute feature and add 2 tablespoons of olive oil.
- Once the olive oil is fragrant, add the cubed butternut squash and season with salt and pepper. Sauté in the Instant Pot for approximately 6 minutes, or until the butternut squash pieces begin to brown lightly.
- Remove the browned butternut squash from the Instant Pot and transfer it into a small, microwave-safe bowl that can fit inside the Instant Pot.
- Pour 1 cup of water into the bottom of the Instant Pot and place the trivet (steaming rack) into the pot.
- Next, carefully place the glass bowl full of butternut squash on top of the trivet. Cover the Instant Pot, secure the lid, and cook on high pressure for 1 minute.
- Once cooked, perform a quick release of pressure. Carefully remove the bowl from the Instant Pot and set the butternut squash aside.
Kale + Apple Slaw
- Place all ingredients for the apple kale slaw (thinly sliced apple, packed baby kale, thinly sliced red onion, dried cherries or cranberries, lemon juice, honey, apple cider vinegar, olive oil, and a pinch of salt) into a large mixing bowl. Toss vigorously until all ingredients are well combined and the kale is slightly softened. Set aside.
Tahini Dressing
- Prepare the dressing by combining all ingredients for the tahini dressing (tahini, olive oil, garlic powder, balsamic vinegar, salt, and pepper) into a mason jar. Tightly cover the jar and shake it vigorously until all the ingredients are thoroughly combined and emulsified into a smooth, creamy dressing.
Assemble Your Harvest Bowl
- To assemble the harvest bowls, evenly distribute the cooked wild rice, roasted Brussels sprouts, cooked butternut squash, fresh kale and apple slaw, and a generous drizzle of tahini dressing into six separate bowls or meal prep containers.*
Tips & Notes
*If you are meal prepping these harvest grain bowls for later enjoyment, it’s recommended to hold off on adding the dressing until just before serving to maintain the freshness and texture of all components.
