Choosing the Perfect Fish for Your Tacos

When it comes to crafting the ideal fish taco, the type of fish you choose is ultimately a matter of personal preference. Some enthusiasts swear by light, flaky white fish, while others prefer the richer taste of ahi tuna. The beauty is in the variety, and there’s no wrong answer! To help you decide, here are some of our top recommendations for fish that shine in tacos:

  • Cod: Often one of the most budget-friendly fish options available, cod is a versatile white fish known for its mild, slightly “fishy” flavor and tender, flaky texture. It acts like a culinary sponge, readily absorbing the vibrant flavors of any spices or marinades you use, making it perfect for our zesty Cajun seasoning.
  • Tilapia: Another excellent choice for fish tacos, tilapia is a lean, white fish with a very mild flavor, making it a crowd-pleaser, especially for those new to seafood. You can typically find tilapia both fresh at the butcher counter and frozen in most grocery stores; both forms work wonderfully in this recipe.
  • Ahi Tuna: A true delicacy, ahi tuna is one of our all-time favorite fish varieties (and a star in our seared ahi tuna poke bowl). We often stock up on ahi when we find it on sale at our local butcher. It possesses a distinct, rich, and “fishy” taste, offering a more substantial bite and a higher quality feel, though it can be a bit more expensive.
  • Walleye: If you’re from the Midwest, you likely know and love walleye. For those outside of states like Minnesota or Wisconsin, you might be surprised to learn that walleye is not only edible but absolutely delicious! It has a delicate, sweet flavor and a firm, flaky texture that holds up beautifully in tacos.

Regardless of your choice, always keep these essential tips for buying fish in mind to ensure you get the freshest, highest-quality product for your sensational fish tacos!

Essential Tip: How to Buy the Freshest Fish

When purchasing fish from a grocery store, especially from the seafood counter, it’s crucial to understand how it’s handled. Often, the fish displayed in the case has been previously frozen and is in the process of thawing. While this isn’t necessarily a bad thing, it does impact its freshness and shelf life once you bring it home.

To ensure you’re getting the best quality and to avoid any unpleasant surprises, always remember to ask your butcher a simple yet vital question: “How long has this fish been thawed and sitting out in the case?” A reputable butcher will be transparent with this information. Knowing this helps you gauge how quickly you need to cook the fish and ensures you don’t end up with a spoiled product when you’re ready to make your delicious tacos. Freshness is key to outstanding fish tacos!

Elevate Your Tacos: The Art of Toppings

While the seasoned baked fish is undoubtedly the star of these tacos, the right toppings can transform a great meal into an extraordinary culinary experience. This is where you can truly customize and inject your personal flair into every bite! You can opt for a minimalist approach with just a squeeze of lime, or you can go all out and prepare a vibrant, crunchy coleslaw and creamy sauce to crown your creations. The choice is entirely yours, but we highly recommend embracing the world of toppings!

For these particular tacos, we’ve “jazzed them up” with a combination of fresh, tangy, and creamy elements. Here are the toppings we used, along with some other fantastic ideas to inspire your own taco masterpieces:

  • Crunchy Coleslaw: Adds a refreshing crunch and a hint of tang, perfectly complementing the flaky fish.
  • Zesty Crema: A creamy, cool sauce that balances the spices of the Cajun seasoning. Our recipe includes a simple, delicious version.
  • Fresh Lime Juice: An absolute must! A squeeze of fresh lime brightens all the flavors and adds essential acidity.
  • Pico De Gallo: A classic salsa made with fresh tomatoes, onions, cilantro, and jalapeño for a burst of fresh flavor.
  • Creamy Guacamole: Rich, creamy avocado goodness that adds healthy fats and a smooth texture.
  • Thinly Sliced Red Onion: Offers a sharp, pungent bite and a beautiful pop of color.
  • Cilantro: Fresh chopped cilantro for an herbaceous, bright finish.
  • Cotija Cheese: Crumbled cotija cheese adds a salty, savory dimension.
  • Pickled Jalapeños: For those who love an extra kick and a vinegary tang.

Don’t be afraid to mix and match to find your perfect combination!

Fish Taco Fundamentals: Your Questions Answered

How long do you need to bake fish for perfect tacos?

Baking time for fish can vary quite a bit, depending on several factors:

  • Type of fish: Thicker, denser fish like swordfish will take longer than delicate, flaky fish like tilapia.
  • Weight and thickness of the fillet: A larger, thicker fillet naturally requires more time in the oven. For instance, our 1 lb cod fillet, approximately an inch thick, bakes perfectly in about 12-16 minutes at 400ºF.
  • What vessel the fish is baked in: A heavy ceramic dish might retain heat differently than a thin metal baking sheet.
  • Oven temperature: Higher temperatures cook faster but require closer monitoring.

The best way to tell if fish is done is by checking its internal temperature (it should reach 145°F/63°C) or observing its flakiness. Properly cooked fish will flake easily with a fork and be opaque throughout. A crucial warning: if you notice your fish has a strong, pungent odor that goes beyond a normal “fishy” smell, or if it takes an unusually long time to cook and still appears underdone, it might be spoiled. Always prioritize food safety; when in doubt, it’s best to discard it.

Can I meal prep these delicious fish tacos?

Absolutely! Fish tacos are excellent for meal prepping, allowing you to enjoy a quick, healthy meal even on your busiest days. To meal prep, simply bake the fish according to the recipe instructions and prepare all your desired toppings, such as the coleslaw and crema. Store each component separately in airtight containers in the refrigerator.

When you’re ready to eat, gently reheat the fish (or enjoy it cold, depending on your preference), warm your tortillas, and then assemble your tacos just before serving. This method keeps all ingredients fresh and prevents your tortillas from becoming soggy, ensuring a delightful texture in every bite.

How long does cooked fish stay good in the fridge?

Cooked fish, when stored properly in an airtight container, will typically remain fresh and safe to eat for up to 3-4 days in the refrigerator. However, always trust your senses! The “smell test” is your best indicator. If the fish develops any off-odors, or if its texture changes significantly, it’s a clear sign that it’s no longer good to eat.

What type of tortillas are best for fish tacos?

The choice of tortilla is entirely up to you and your taste preferences! Both corn and flour tortillas work wonderfully for fish tacos. Lately, we’ve been utterly obsessed with Mission’s street taco flour tortillas. Their small size and soft texture are perfect for holding all those delicious fillings without overwhelming the fish. If you prefer a more traditional Mexican flavor, corn tortillas are a fantastic option. For the best experience, always warm your tortillas slightly before assembling; this makes them more pliable and enhances their flavor.

Ingredients

Cod

  • 1 lb. fresh cod
  • 2 tablespoons Cajun seasoning
  • 1/2 small lime, sliced into rounds
  • 3 tablespoons butter, cut into 1-tablespoon pads

Slaw

  • 2 cups thinly sliced red cabbage
  • 1.5 cups shredded kale, deboned
  • 1/2 medium red onion, sliced
  • 1 cup sliced radishes
  • 1.5 tablespoons apple cider vinegar
  • 1 tablespoon avocado oil
  • 1/2 teaspoon salt

Crema

  • 1/3 cup nonfat Greek yogurt
  • 1/4 cup cotija cheese crumbles
  • 1.5 tablespoons lime juice
  • pinch salt

Other

  • 8 flour street taco tortillas
  • fresh lime juice, for serving

Instructions

  • Preheat your oven to 400ºF (200°C) and generously spray a baking dish with nonstick cooking spray.
  • Remove the fish from the refrigerator. Use paper towels to blot away any excess moisture from the fish fillets; this helps achieve a better texture.
  • Place the fish into the prepared baking dish. Generously sprinkle both sides of the fish with Cajun seasoning, ensuring it is evenly covered.
  • Arrange the lime slices and pads of butter on top of the seasoned fish. Bake the cod at 400ºF for 12-16 minutes. Baking time may vary based on the thickness of your fish fillets.
  • While the fish is baking in the oven, take this time to prepare your coleslaw and the zesty lime crema.
  • For the coleslaw: Combine all the ingredients for the coleslaw into a large mixing bowl.
  • Mix all ingredients thoroughly until well combined. Cover the bowl and place it in the refrigerator to chill until ready to serve.
  • For the crema: In a small bowl, whisk all the crema ingredients together until smooth. Cover and refrigerate until needed.
  • Finally, remove the baked fish from the oven. The fish is done when it flakes apart easily with a fork and is firm to the touch, no longer translucent like raw fish. If it’s not quite ready, return it to the oven and check every few minutes.
  • Using two forks, carefully break the cooked fish into larger, bite-sized chunks (avoid shredding it too finely).
  • Assemble your tacos: Evenly distribute the flaky fish, crunchy coleslaw, and creamy lime crema into your warmed street taco tortillas.
  • Serve immediately with an extra squeeze of fresh lime juice and additional cotija cheese, to taste. Enjoy your incredibly delicious and easy baked fish tacos!
