  • 1 cup chopped, fresh spinach, packed
  • 3 tablespoons shredded white cheddar cheese
  • 3 large eggs
  • 1 cup water

Instructions

  • First, crack all the eggs into a container equipped with a convenient pour spout. Whisk the eggs thoroughly until the mixture is smooth and completely free of any visible chunks. Set this aside.
  • Activate the “Sauté” function on your Instant Pot. Once the display indicates it’s hot (often showing “Hot” or “On”), add the olive oil to the inner pot.
  • As soon as the olive oil is shimmering and fragrant, add the minced garlic and chopped onion. Sauté these aromatics for about 2 minutes, stirring occasionally, until they become translucent and softened. Next, add the fresh, chopped spinach to the pot and continue to sauté until the spinach has fully wilted.

Finally, pour the whisked egg mixture into each cup, filling them about three-quarters of the way full. Use the back of a small spoon to gently stir and combine all the ingredients within each cup.

  • Place the trivet (steaming rack) at the bottom of your clean Instant Pot inner pot. Pour 1 cup of water into the pot. Carefully place the filled silicone egg bites mold on top of the trivet. Secure the lid on your Instant Pot, ensuring it’s properly sealed.

  • Turn the pressure release valve to the “Sealing” position. Select the “Manual” or “Pressure Cook” setting and set the pressure level to “High.” Adjust the cooking time to 10 minutes. Please note that it will take approximately 10 minutes for your Instant Pot to build pressure before the countdown timer begins.
  • Once the 10-minute cooking cycle is complete and the timer goes off, perform a quick release of the pressure by carefully turning the valve to the “Venting” position. Once all the pressure has been released and the float valve has dropped, open the lid. Carefully remove the silicone mold from the Instant Pot.
