Herby Cucumber Tomato Salad with Feta: Your Ultimate Fresh Summer Side
In our studio, Linley and Emily have a running joke about their “herb salad” obsession. It seems no matter what they’re eating, a handful of fresh herbs makes everything better. This principle perfectly applies to our Herby Cucumber Tomato Salad. The addition of fresh garden herbs transforms a simple combination of vegetables into something truly extraordinary and undeniably addictive.
We’ve elevated this classic with a fragrant blend of fresh basil, mint, and dill, all tossed in a simple yet punchy vinegar-forward dressing. This unique combination gives our salad an irresistible twist that we genuinely believe makes it stand out from any other cucumber tomato salad you’ll find online! The beauty of this recipe also lies in its versatility; you can use any variety of tomato you prefer, truly making it a delightful “garden salad.” And of course, no salad is complete without a little cheese, so we generously top ours with crumbled feta for that perfect salty, tangy counterpoint.
Essential Ingredients for a Perfect Herby Cucumber Tomato Salad
Crafting a truly exceptional Herby Cucumber Tomato Salad starts with high-quality, fresh ingredients. Each component plays a vital role in creating the vibrant flavors and appealing textures that make this salad a standout dish:
- Tomatoes: For this particular version of our Herby Cucumber Tomato Salad, we prefer the sweet burst of cherry tomatoes. Their small size makes them perfect for bite-sized pieces when halved. Regardless of the tomato variety you choose, be sure to half or quarter them before tossing them with salt. This crucial step helps draw out excess moisture, preventing a watery salad.
- Cucumbers: The key to great cucumber texture in this salad is slicing them thinly and into uniform, bite-sized pieces. While English cucumbers are often favored for their thin skin and minimal seeds, any type of cucumber will work beautifully here. Leaving the skin on adds a lovely pop of color and extra fiber.
- Red Onion: Thinly sliced red onion contributes a delightful crunch, a hint of sharp flavor, and a subtle sweetness to the salad. When tossed with vinegar, as we do in this recipe, it transforms into quick pickled red onions, mellowing their raw bite and infusing the dressing with an even richer tang.
- Vinegar: Our signature dressing for this salad features a dynamic duo of white wine vinegar and apple cider vinegar. This combination provides a bright, acidic base that perfectly complements the fresh vegetables and herbs. We start by tossing the onions directly with this vinegar mixture, allowing them to quick pickle and infuse the entire dressing with their distinctive flavor.
- Feta Cheese: The addition of crumbled feta cheese is a game-changer, introducing a salty, tangy, and creamy element that beautifully cuts through the tartness of the vinaigrette and the freshness of the vegetables. If dairy isn’t your preference, this salad is still wonderfully delicious without it, or you could explore plant-based feta alternatives.
- Fresh Herbs: A generous handful of fresh herbs is what truly makes this a “herby” salad. We use a fragrant combination of basil, mint, and dill. Basil offers a sweet, peppery note, mint provides a cooling brightness, and dill adds a distinct tangy, slightly anise-like freshness. These herbs are not just garnishes; they are integral to the salad’s unique and addictive flavor profile.
- Salt: Beyond seasoning, salt plays a critical role in the texture of this salad. Using a measured amount of salt on the cucumbers and tomatoes before assembly is the secret to preventing a soggy, watery result.
The Secret to a Crisp Cucumber Tomato Salad: Preventing Wateriness
One common complaint about cucumber and tomato salads is that they can quickly become watery, diluting the flavors and compromising the texture. We’ve discovered a simple yet highly effective technique to combat this: pre-salting the vegetables. By gently tossing your chopped cucumbers and tomatoes with a small amount of salt before assembling the salad, you initiate a process called osmosis. The salt draws out the excess moisture from the vegetables, which you can then easily discard. This step is a game-changer, ensuring your Herby Cucumber Tomato Salad remains wonderfully crisp, fresh, and bursting with concentrated flavor without becoming soggy or diluted. It’s a small effort that makes a huge difference in the final result!

Step-by-Step: How to Make Herby Cucumber Tomato Feta Salad
Creating this delicious Herby Cucumber Tomato Feta Salad is surprisingly simple and comes together in just a few key steps. Follow these instructions for a perfectly balanced and flavorful dish:
- Prepare the Vinaigrette: In a jar, combine the white wine vinegar, apple cider vinegar, honey, and a pinch of salt. Secure the lid and shake vigorously until all ingredients are well combined and the honey has dissolved. This creates the flavorful base for your dressing.
- Quick Pickle the Onions: Thinly slice your red onion and place it in a bowl. Pour the freshly made vinegar mixture over the onions, ensuring they are well coated. Gently toss and set them aside. The vinegar will begin to mellow the onion’s sharpness and infuse it with tangy flavor, creating delightful quick pickled red onions that will be integrated into your dressing.
- Salt and Drain Vegetables: Place your sliced cucumbers and halved cherry tomatoes in a colander. Sprinkle them with ½ teaspoon of salt and toss gently to ensure even distribution. Position the colander over a mixing bowl to catch any liquid. Allow the vegetables to sit for about 15 minutes. This vital step extracts excess water, guaranteeing a crisp and non-watery salad.
- Combine and Serve: Discard the accumulated liquid from the cucumbers and tomatoes, then transfer them to a large salad bowl. Add the quick pickled onions along with their vinegar mixture to the bowl and gently toss everything together. Finally, stir in the ripped fresh basil leaves, mint leaves, and roughly chopped fresh dill. Give it one last gentle toss to distribute the herbs evenly. Top generously with feta cheese crumbles and serve immediately to enjoy its peak freshness.

Customize Your Creation: Ingredient Swaps and Additions
One of the best aspects of this Herby Cucumber Tomato Salad is how easily it can be adapted to your personal taste preferences or whatever fresh ingredients you have on hand. Don’t hesitate to get creative!
Smart Swaps for Every Palate
- Tomatoes: No cherry tomatoes? No problem! Feel free to use any variety of tomatoes you prefer. Roma, beefsteak, or heirloom tomatoes will all work beautifully, just be sure to cut them into bite-sized pieces for consistent texture throughout the salad. Regardless of the type, never skip the crucial step of salting the tomatoes. This draws out excess liquid, ensuring your salad remains crisp and flavorful, not watery.
- Cucumbers: This recipe is incredibly versatile when it comes to cucumbers. English cucumbers, Persian cucumbers, or even standard garden cucumbers will all yield delicious results. For larger varieties, cutting them into half moons or other bite-sized shapes is ideal. We love leaving the skin on for an added pop of color and a bit of extra texture and nutrients, but if you prefer a smoother bite, feel free to peel them.
- Vinaigrette: The vinegar-forward dressing is key, but you have flexibility with your vinegars. Feel free to swap the white wine vinegar and apple cider vinegar for any combination you enjoy. White vinegar, rice vinegar for a milder Asian-inspired twist, or even a good quality balsamic vinegar for a richer, sweeter profile would work. Remember to adjust the honey or other sweeteners to balance the acidity of your chosen vinegar. A splash of olive oil, while not explicitly listed in the main dressing components but implied, would also create a more rounded vinaigrette.
- Herbs: While our classic blend of basil, mint, and dill is fantastic, you can experiment with other fresh herbs. Parsley, chives, or even a touch of oregano could add an interesting dimension to your salad.
Elevate Your Salad: Exciting Add-Ins
Looking to transform your Herby Cucumber Tomato Salad into a heartier meal or introduce new flavor profiles? Here are some fantastic additions:
- Beans: Canned chickpeas, cannellini beans, or black beans rinsed and drained can add a wonderful source of plant-based protein and fiber, making the salad more filling.
- Olives: Kalamata or black olives bring a salty, briny, Mediterranean flair that pairs wonderfully with feta and fresh vegetables.
- Bell Pepper: Sliced red, yellow, or orange bell peppers add a sweet crunch and a vibrant splash of color.
- Artichoke Hearts: Marinated artichoke hearts (drained and chopped) introduce a tangy, earthy flavor and tender texture.
- Microgreens: A handful of microgreens or baby spinach can boost nutritional value and add a delicate peppery or earthy note.
- Watermelon: For an unexpectedly refreshing twist, especially in peak summer, cubed watermelon adds a juicy sweetness that contrasts beautifully with the savory elements.
- Avocado: Diced avocado adds a creamy texture and healthy fats, enhancing the salad’s richness.
- Grilled Protein: For a complete meal, consider adding grilled chicken, shrimp, or halloumi cheese.
- Pasta: As suggested in our tips, adding about 4 ounces of cooked pasta can effortlessly turn this into a delicious, light pasta salad.

Expert Tips for Storage and Enjoying Leftovers
While this Herby Cucumber Tomato Salad is absolutely best enjoyed fresh, you can certainly prepare it ahead or save leftovers with a few smart strategies to maintain its crispness and flavor.
Optimal Storage for Maximum Freshness
To prevent your salad from becoming soggy, especially with the moisture-rich cucumbers and tomatoes, we highly recommend storing it in a sieve or colander. Place the sieve over a bowl or plate in the refrigerator. This setup allows any residual excess water to drip away, keeping your salad crunchier for longer. When stored this way, the salad will remain fresh and delicious for up to 1 day. Beyond that, the textures might start to soften significantly due to the vinegar and continued release of moisture from the vegetables.
Making the Most of Leftovers
As mentioned, this recipe is truly at its peak within 24 hours of preparation. Because it’s made with fresh, delicate herbs and a vinegar-based vinaigrette, the greens (if added, or even the herbs themselves) can begin to wilt and the vegetables can soften over time. For the best culinary experience, aim to consume it fresh.
If you do have leftovers, the sieve storage method will certainly help. However, after about a day, while still safe to eat, the texture won’t be as crisp. Don’t let slightly less-than-perfect leftovers go to waste! A slightly softer Cucumber Tomato Salad can still be repurposed. Consider stirring it into cooked pasta for a quick pasta salad, using it as a vibrant topping for grilled fish or chicken, or even blending a portion into a refreshing gazpacho-style soup base. Its bright flavors are still wonderfully versatile.

- 3 cups cherry tomatoes, halved
- ¼ cup fresh basil leaves, ripped
- ¼ cup fresh mint leaves, ripped
- 2 tablespoons fresh dill, roughly chopped
- ¼ cup feta cheese crumbles
Instructions
-
Add the white wine vinegar, apple cider vinegar, honey, and ¼ teaspoon salt to a mason jar and cover. Shake the jar until all the ingredients are combined and the honey is no longer stuck to the bottom of the jar.
-
Next, add the sliced onion to a bowl and pour the vinegar mixture over the onions and mix. Set the onions aside to quick pickle.
-
Add the cucumbers and cherry tomatoes to a colander and sprinkle with ½ teaspoon salt and toss the ingredients together. Set the colander on a mixing bowl to catch the liquid that is drawn out of the tomatoes and cucumber. Let the vegetables sit for about 15 minutes.
-
Discard the excess liquid from the tomatoes and cucumbers and add them to a salad bowl. Add the quick pickled onions and their vinegar dressing to the tomatoes and cucumbers and mix gently.
-
Add the fresh basil, mint, and dill and toss to combine, ensuring the herbs are evenly distributed throughout the salad.

Top the salad with feta cheese crumbles just before serving for the best flavor and presentation.
Tips & Notes
- You can use regular cucumbers for this recipe, as well. We recommend that you slice them into half moons for consistent bite-sized pieces.
- Feel free to swap out any of the vinegars used with red wine vinegar, rice vinegar, or even a good quality balsamic vinegar to customize the dressing’s flavor profile.
- Don’t skip salting the cucumbers and tomatoes before making the salad. This is a very important step! It effectively draws out excess moisture, preventing a watery and diluted salad, and ensuring maximum crispness and flavor. We are reminding you because it truly makes a difference!
- Store this salad in a sieve. For optimal freshness and to keep your salad delightfully crunchy for longer, store any leftovers in a sieve placed over a bowl in the refrigerator. This allows any additional moisture to drain away.
