Why Sous Vide? The Secret to Perfectly Fluffy Egg Bites

Sous vide egg bites aren’t your average egg preparation. Thanks to the precise temperature control of the sous vide method, they emerge from their water bath with an incredibly consistent, custard-like texture that is perfectly cooked throughout – never rubbery, never dry. This cooking technique ensures a delicate, soufflé-like consistency that sets them apart. Our simple sous vide egg bites recipe requires just three core ingredients – eggs, milk, and cheese – and promises results that rival any coffee shop. I particularly love serving mine with a dash of hot sauce for an extra kick!

In essence, the process is straightforward: Prepare your egg mixture in 4-ounce mason jars, layering cheese at the bottom and the egg mixture on top. Seal the jars, submerge them in a preheated sous vide water bath set to 172ºF, and cook for precisely one hour. The controlled environment of the sous vide bath guarantees an even cook, preventing overcooked edges or undercooked centers, giving you a consistently perfect bite every time.

Gather Your Essentials: Ingredients & Equipment for Homemade Sous Vide Egg Bites

Before you dive into crafting these delectable egg bites, let’s ensure you have everything you need. This recipe is designed to be simple, using readily available ingredients and standard sous vide equipment. The beauty of these bites lies in their minimal ingredient list and the hands-off cooking process.

Key Ingredients:

  • Eggs: This recipe primarily calls for 10 large eggs to create a fluffy, rich base. The freshness of your eggs can impact the final texture, so opt for the best quality you can find.
  • Milk: Milk is crucial for achieving that signature fluffy texture. While any milk will work, we often use unsweetened almond milk for a slightly lighter touch, but whole milk or even cream can add extra richness.
  • Shredded Cheese: Colby Jack cheese offers a wonderful melt and mild, creamy flavor that complements the eggs perfectly. However, feel free to experiment with your favorite shredded cheese varieties. Cheddar, Gruyère, mozzarella, or a blend can all work beautifully.
  • Salt and Pepper: Essential for seasoning to taste. A simple sprinkle makes a big difference.

Essential Equipment:

  • Sous Vide Machine: This is the star of the show! If you’re new to sous vide, don’t worry – they are incredibly user-friendly. Your immersion circulator will precisely heat the water bath, ensuring perfect cooking.
  • Large Stockpot or Container: You’ll need a pot tall enough to fully submerge your mason jars without them touching the bottom or each other. A 6-quart or larger stockpot usually works well. If your pot isn’t quite large enough for all jars side-by-side, you might be able to carefully stack them.
  • 6-9 4-oz. Mason Jars with Lids: These small jars are perfect for individual egg bite portions. Ensure you have clean jars and lids readily available. The 4-ounce size is ideal for fitting into a standard stockpot and creating perfect single servings.
  • Cooking Spray or Oil: Crucial for preventing the egg bites from sticking to the jars.

Pro Tip: If you don’t own a sous vide machine yet, you can still enjoy delicious egg bites! Check out our Instant Pot Egg Bites recipe for a super similar and equally delicious alternative that uses a pressure cooker.

Step-by-Step Guide: How to Make Sous Vide Egg Bites

Making sous vide egg bites is surprisingly simple, primarily a hands-off process once the setup is complete. Follow these steps for perfect, café-quality results every time:

  1. Prepare Your Water Bath: Begin by filling a large container or stockpot with water. The water level should be sufficient to fully submerge the mason jars you’ll be using, ensuring even cooking.
  2. Set Up Your Sous Vide: Attach your sous vide immersion circulator to the side of the pot. Set the temperature to 172ºF (approximately 78ºC). Allow the water to heat up completely while you prepare your egg mixture.
  3. Prep the Mason Jars: Thoroughly spray the insides of 9 4-ounce mason jars with nonstick cooking spray. This crucial step prevents the egg bites from sticking, making them easy to remove after cooking. Next, spoon about a tablespoon of your shredded cheese (like Colby Jack) into the bottom of each jar. This ensures a delicious cheesy base.
  4. Whisk the Egg Mixture: In a large bowl, crack 10 eggs. Add 1/3 cup of milk (we recommend unsweetened almond milk for a lighter option) and whisk vigorously until the eggs and milk are thoroughly combined and slightly frothy. Season the mixture with a pinch of salt and pepper.
  5. Fill the Jars: Carefully pour the egg mixture into each prepared mason jar, filling them approximately 3/4 of the way full. This should yield about 9 individual egg cups. Give each jar a gentle stir to mix the cheese with the egg, then add an additional pinch of salt and pepper to the top of each egg cup for enhanced flavor.
  6. Seal the Jars (Crucial Step!): Screw the lids onto your mason jars. This is a critical point: **do not fully tighten the lids.** To prevent pressure from building up and potentially cracking the jars in the hot water bath, tighten the lid, then unscrew it about one full turn. This allows steam to escape safely.
  7. Submerge and Cook: Once your water bath has reached 172ºF, carefully lower the prepared and loosely sealed mason jars into the water. Ensure they are fully submerged. You’ll likely see small bubbles escaping from the jars, which is perfectly normal and indicates proper sealing.
  8. Cook to Perfection: Set a timer for 1 hour and let the sous vide work its magic. The consistent temperature will cook the egg bites gently and evenly.
  9. Remove and Enjoy: After 1 hour, use tongs to carefully remove the hot mason jars from the water bath. Let them cool briefly before unscrewing the lids. Your egg bites should have a soft, spongy, soufflé-like texture. If any appear too runny, you can cook them for a bit longer. Use a small knife or spoon around the edges to help them slide out easily, then serve immediately!

Achieving Perfection: How to Know When Your Sous Vide Egg Bites Are Done Cooking

The beauty of sous vide cooking is its precision, which largely takes the guesswork out of determining doneness. However, it’s helpful to know what to look for when your timer goes off. Sous vide egg bites are designed to be like miniature soufflés – they should be light, airy, and delicately set. When you remove them from their jars, they should feel spongy to the touch, with a firm yet yielding texture throughout. The center should not be runny, but rather uniformly cooked and creamy. If you find any part of your egg bite to be undercooked or too liquid, simply place the jar back in the water bath for another 10-15 minutes until it reaches the desired consistency. The consistent 172°F temperature prevents overcooking, so you have a generous window to achieve perfect results.

Unleash Your Creativity: Delicious Sous Vide Egg Bite Variations

While our base recipe is wonderfully simple and delicious, one of the best parts about making egg bites at home is the endless possibilities for customization! You can easily adapt these cheesy sous vide egg bites to suit your taste preferences or whatever ingredients you have on hand. Here are some fantastic variations to inspire you:

Cheese Combinations:

Experiment with different types of cheese beyond Colby Jack. We’ve had great success with:

  • Yellow Cheddar: For a sharper, classic cheesy flavor.
  • Gouda: Adds a nutty, slightly sweet richness.
  • Mozzarella: Provides a mild, milky flavor and a lovely stringy melt.
  • Feta: For a tangy, salty Mediterranean twist (pairs well with spinach).
  • Goat Cheese: Offers a creamy, tart, and earthy flavor, perfect with roasted red peppers.
  • Cottage Cheese: Riding the current cottage cheese trend, whisking in a few tablespoons of cottage cheese can add extra protein and a surprisingly creamy texture. You might also like our Cottage Cheese Baked Eggs!

Savory Add-ins:

To really elevate your egg bites, consider incorporating cooked ingredients into the mixture before filling the jars. Ensure any vegetables are sautéed and meats are cooked and drained of excess fat to prevent a watery or greasy result.

  1. Cooked Peppers and Onions: Sautéed bell peppers (any color) and sweet onions add a wonderful aroma and burst of flavor.
  2. Cooked Breakfast Sausage or Bacon: Crumbled breakfast sausage or crispy bacon bits are classic additions that boost protein and savory goodness.
  3. Sautéed Garlic or Shallots: For an aromatic depth of flavor.
  4. Fresh Herbs: Finely chopped chives, parsley, dill, or cilantro can add brightness and a fresh finish. Add them just before cooking or sprinkle them on top after.
  5. Spinach and Feta: A Mediterranean-inspired combination. Sauté the spinach briefly to remove excess moisture.
  6. Mushrooms and Thyme: Earthy mushrooms (sautéed) with a hint of fresh thyme.
  7. Sun-Dried Tomatoes and Basil: For a burst of intense, sweet-tart flavor.
  8. Chorizo and Potato: A heartier, spicier option with finely diced, cooked chorizo and small potato bits.

Frequently Asked Questions (FAQ) About Sous Vide Egg Bites

Here are answers to some common questions you might have when making sous vide egg bites:

Can I use just egg whites instead of full eggs?

Yes, absolutely! If you prefer a lower-fat option or simply want to use egg whites, they work wonderfully in this recipe. Just be aware that egg whites have less volume than whole eggs, so you may need to increase the quantity of egg whites to fill each jar approximately 3/4 of the way full. The texture will be slightly different – typically a bit firmer than with whole eggs – but still incredibly delicious and protein-packed.

Can you sous vide eggs for longer than an hour?

Yes, you can! Sous vide cooking is very forgiving. While 1 hour at 172ºF is ideal for achieving that perfect soufflé-like texture, your egg bites can safely cook for up to 2 hours without significant changes in texture or quality. Cooking longer than 2 hours is generally not recommended, as the texture may start to become too firm. The beauty of sous vide is that once your food reaches the target temperature, it won’t cook further, only hold that temperature, so you have a flexible window.

Can I use silicone molds instead of mason jars?

Yes, silicone molds are an excellent alternative to mason jars, especially if you want to avoid glass. Silicone molds designed for egg bites or muffins work well in a sous vide bath. Ensure the molds are high-quality, food-grade silicone and can be fully submerged without floating (you might need to weigh them down). The cooking time and temperature will remain the same, but you might find the egg bites release even easier from silicone.

How do I prevent my mason jars from cracking?

The key to preventing mason jars from cracking in a hot water bath is to ensure they are not sealed too tightly. As mentioned in the instructions, screw the lids on until they are just snug, then unscrew them by about one full turn. This allows any steam or pressure to escape, preventing dangerous pressure buildup. Also, ensure your jars are at room temperature before introducing them to the hot water bath to avoid thermal shock.

These cheesy sous vide egg bites are perfect for meal prepping, making your busy mornings a breeze! Their convenient size and excellent shelf life make them an ideal make-ahead breakfast or snack.

How long do sous vide egg bites last in the fridge?

Once cooked and cooled, store your egg bites in an airtight container in the refrigerator for 3 to 5 days. Can you freeze sous vide egg bites?

To make things incredibly simple, you can even freeze them right in the mason jars they were cooked in. Just ensure your egg bites are completely cool before freezing. Then, secure the lids tightly and place the jars in the freezer. They will keep well for up to 3 months. • Prep Time: 15 mins
  • Cook Time: 1 hr
  • Total Time: 1 hr 15 mins
  • Servings: 9

Ingredients

  • 10 large eggs
  • 1/3 cup milk (we used unsweetened almond milk)
  • 1/2 cup Colby jack shredded cheese
  • Salt and pepper, to taste

Instructions

  1. First, fill a large stockpot halfway up with water. You’ll want to be able to submerge all of your mason jars with water, so keep that in mind.
  2. Next, secure your sous vide to the side of your pot and turn to 172ºF. While your water bath is heating up, prepare egg bites.
  3. Thoroughly spray 9 4-oz. mason jars with nonstick cooking spray. Then, spoon about a tablespoon of shredded cheese onto the bottom of each mason jar.
  4. Crack 10 eggs inside a medium bowl or Pyrex. Add the milk and whisk until scrambled.
  5. Fill each mason jar up about 3/4 of the way full with the egg mixture. You should get about 9 egg cups. Give each egg cup a little stir and then season the tops with salt and pepper, to taste.
A tray of small jars filled with orange sauce inspired by sous vide egg bites.
  6. Now it’s time to screw on the lids of your mason jars. You want to make sure that you don’t fully tighten your mason jars so that they do not explode in the water bath. Screw on tops and then unscrew one turn.
  7. Submerge mason jars inside of the water bath. You should see lots of bubbles come to the top. This is good!
A pot filled with sous vide egg bites, each jar sealed with a lid.
  8. Set the timer for 1 hour and let cook.
  9. Once the timer goes off, use tongs to remove the mason jars (they will be hot) and then unscrew them. Your egg cups should feel like a soufflé. If they’re still runny, you need to cook them longer. If you’re ready to eat, grab a fork!

Tips & Notes

  • Stock pot size? This recipe makes 9 4-oz. egg cups. The amount of egg cups you make depends on the size of your stock pot. So, before you start cracking eggs, see how many mason jars you can fit on the bottom of your pot. You can also try stacking the jars in your pot.
  • Don’t overflow jars: Make sure you buy nothing bigger than a large egg so that everything fits perfectly in your small mason jar! You don’t want your sous vide eggs overflowing.
  • Oil jars: Make sure that each Mason Jar is well-oiled. I repeat, DO NOT forget to spray/oil your jars before adding in the egg. You do this so that the egg bites don’t stick to the edges. Use something like coconut oil cooking spray or olive oil to grease the inside of your Jars.
