  • 1/3 cup chocolate chunks, + more for topping, if desired

  • 1 large egg
  • 1/2 cup creamy cashew butter, drippy
  • 1/2 cup unsweetened pumpkin puree
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract

Instructions

  1. First, preheat your oven to 350ºF (175ºC). Lightly spray an 8-inch x 8-inch baking dish with nonstick cooking spray to prevent sticking and ensure easy removal of your bars.
  2. In a medium-sized mixing bowl, combine all the dry ingredients: rolled oats, white whole wheat flour, coconut sugar (or light brown sugar), baking powder, baking soda, pumpkin pie spice, and a pinch of salt. Mix them thoroughly until well combined, then set this bowl aside.
