  • 1/3 cup finely diced yellow onion
  • 1 large egg
  • 1/4 cup white whole wheat flour, option to sub all-purpose or gluten-free all-purpose flour
  • 1/3 cup rolled oatmeal
  • 1 tablespoon sriracha
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon ground pepper
  • 2 teaspoons minced garlic

For the Kung Pao Sauce

  • 4 tablespoons soy sauce, option to tamari or coconut aminos
  • 2 tablespoon sriracha
  • 2 tablespoon chili garlic sauce
  • 2 tablespoonhoney

Instructions 

  • First, preheat your oven to 400ºF (200ºC). Prepare a baking sheet by spraying it lightly with coconut oil cooking spray or lining it with parchment paper for easy cleanup. Set the prepared baking sheet aside.
  • Next, prepare the chicken meatball mixture. In a large mixing bowl, combine all the meatball ingredients: ground chicken (or turkey), finely diced yellow onion, large egg, flour, rolled oats, sriracha, sea salt, ground pepper, and minced garlic. Mix thoroughly until all ingredients are well combined, being careful not to overmix, which can make the meatballs tough.
  • Using a tablespoon-sized cookie scoop (this ensures uniformly sized, bite-sized meatballs), scoop out a heaping portion of the mixture. Gently mold it into a ball with your hands.
