  • 6 medium russet potatoes, quartered
  • 1 medium white onion, chopped
  • 6 medium carrots, diced into 4 pieces each
  • 4 cloves garlic, roughly chopped
  • 3 lbs. boneless pork shoulder roast
  • 2 tablespoons olive oil
  • 6 sprigs rosemary, bundled
  • 6 sprigs thyme, bundled
  • 2 tablespoons balsamic vinegar
  • 1/2 cup red wine
  • 1/2 cup chicken broth

Pork Dry Rub

  • 1/4 cup brown sugar
  • 1 tablespoon garlic powder
  • 2 teaspoons onion powder
  • 2 teaspoons coarse salt
  • 1/4 teaspoon cinnamon*
  • 2 teaspoons dried thyme
  • 1 teaspoon pepper

Thickener for Gravy

  • 1.5 tablespoons cornstarch

Instructions

  1. First, prepare your pork dry rub by mixing together all of the spices (brown sugar, garlic powder, onion powder, salt, cinnamon, dried thyme, pepper) in a small bowl. Set aside.
  2. Then, prepare the vegetables. Quarter 6 russet potatoes, chop one medium white onion, dice 6 medium carrots into 4 pieces each, and roughly chop 4 cloves of garlic.
  3. Place the prepared veggie medley evenly on the bottom of your crockpot.
  4. Next, thoroughly rub your boneless pork shoulder roast with the homemade dry rub. Ensure that every nook and cranny of the meat is completely covered in the seasoning.
  5. Heat approximately 2 tablespoons of olive oil in a large cast iron skillet over medium-high heat. Once the olive oil is hot and fragrant (it might shimmer slightly), carefully sear the pork shoulder for about 2 minutes on each side until a golden brown crust forms.
  6. After searing, transfer the pork roast to the crockpot, placing it directly on top of the bed of vegetables. Make sure to scrape any delicious browned bits of rub from the skillet and add them to the crockpot as well, as these add significant flavor.
  7. Create an herb bundle by using baker’s twine to tie together the sprigs of fresh thyme and rosemary. Place this aromatic bundle on top of the pork roast in the crockpot.

  11. To make the gravy: Take about 1/2 cup of the remaining cooking liquid from the crockpot and place it into a microwave-safe Pyrex. Whisk in the 1.5 tablespoons of cornstarch until smooth. Microwave this cornstarch mixture for about 45 seconds (it should become thick and gelatinous). Remove from the microwave and whisk this thickened mixture back into the remaining liquid in the crockpot until it thickens into a rich, thin gravy.
