  • 1 cup light brown sugar, packed
  • 1 large egg
  • 1/4 cup molasses

  • 2-3 tablespoons 2% milk
  • 1 teaspoon vanilla extract

Instructions

  1. First, combine all the dry ingredients (flour, salt, baking soda, ground cloves, ground cinnamon, and ground ginger) in a medium bowl and whisk thoroughly until well mixed. Set this mixture aside.
  2. Next, in a stand mixer fitted with the paddle attachment, cream the cold butter and light brown sugar together on medium speed for about 3-4 minutes until light and fluffy. Add the molasses to the butter and sugar mixture, continuing to cream for approximately 1 minute until fully incorporated. Crack the large egg into the creamed mixture and mix on medium speed until just combined.

  5. When you’re ready to bake your cookies, preheat your oven to 350ºF (175ºC). Line two baking sheets with parchment paper.
  6. Remove the chilled dough from the refrigerator. Lightly sprinkle flour onto a clean, cool work surface and also dust your rolling pin with flour. Cut the dough in half. Place one half of the dough on the floured surface and return the other half to the refrigerator to keep it cool until it’s ready to be rolled out.
  7. Using your floured rolling pin, roll out the dough evenly to a thickness of approximately 1/4-inch. If the dough begins to stick, generously dust it and your rolling pin with more flour.
  8. Use your favorite small or medium cookie cutters to create desired shapes (e.g., gingerbread men, stars, trees). Carefully transfer the cut-out shapes onto your parchment-lined baking sheets, ensuring you leave a little space between each cookie as they will expand slightly during baking. For crucial no-spread results, freeze the cookie cutouts on the baking sheets for 10 minutes before baking. This cold shock is essential to prevent them from spreading too much in the oven.
