Quick and Flavorful Ground Chicken Burgers

Are you searching for the ultimate ground chicken burger recipe? Look no further! This isn’t just another chicken burger; it’s a culinary revelation designed to banish dry, bland chicken patties forever. Our secret to achieving incredibly moist, flavor-packed chicken burgers lies in a simple, yet game-changing ingredient: a touch of cold butter blended right into the mixture. We put these to the test, both with and without butter, and the difference was astonishing – butter unequivocally elevates these burgers to a league of their own!

Beyond the butter, we infuse our patties with classic burger seasonings, enhanced by a surprising twist: a hint of pickle juice. Trust us on this one – it adds an unexpected depth and tang that perfectly balances the rich flavors. And for the grand finale, before serving, each burger is generously slathered with our secret burger sauce, taking your taste buds on an unforgettable journey.

How to Achieve Unbelievably Juicy Chicken Burgers Every Time!

Many home cooks shy away from ground chicken for burgers, fearing it will result in a dry, crumbly patty. It’s true that ground chicken is inherently leaner than beef, but with our proven techniques, you’ll discover how to create patties that are consistently flavorful, tender, and incredibly moist. Say goodbye to dry chicken burgers with these essential secrets:

  1. Incorporate Healthy Fats: Ground chicken, especially leaner varieties, lacks the natural fat content found in beef, which often leads to a dry texture. Our primary secret is adding small cubes of cold butter directly into the meat mixture. As the butter melts during cooking, it bastes the chicken from within, locking in moisture and infusing incredible flavor. For even more richness, consider using slightly higher fat ground chicken (e.g., 90/10) or even a splash of olive oil.
  2. Boost Moisture with Liquids and Aromatics: Beyond butter, strategic liquid additions are key. Worcestershire sauce introduces a deep, savory, umami note that enhances the overall flavor profile, while pickle juice provides a crucial acidic tang and extra moisture. Finely grated onion and garlic also contribute significant moisture and aromatic complexity without overpowering the chicken’s delicate flavor. These ingredients work in harmony to keep the patties tender and flavorful.
  3. Master the Cooking Temperature and Don’t Overcook: Overcooking is the number one enemy of a juicy chicken burger. Unlike beef, chicken doesn’t show its doneness as clearly through color changes, making a reliable meat thermometer indispensable. Always cook chicken burgers until they reach an internal temperature of 165ºF (74ºC). Pulling them off the heat precisely at this point ensures safety without sacrificing moisture. Resting the burgers for a few minutes after cooking also allows the juices to redistribute, leading to a juicier bite.

What You Need for Succulent Ground Chicken Burgers

Crafting the perfect chicken burger starts with a selection of fresh, high-quality ingredients that work together to create an unforgettable flavor and texture. Here’s a detailed look at what you’ll need:

  • Ground Chicken: This recipe calls for 1 pound of ground chicken. You can opt for pre-ground chicken from your butcher or grocery store. If you prefer a slightly richer burger, choose ground chicken with a bit more fat (e.g., 90/10).
  • Onion: Finely grated yellow or white onion adds crucial moisture and a foundational savory flavor that elevates the chicken. Grating ensures it integrates seamlessly into the patty without large chunks.
  • Worcestershire Sauce: A true flavor powerhouse, Worcestershire sauce provides a savory, tangy, and slightly sweet umami boost. It’s an essential ingredient for deepening the overall flavor profile of the burger.
  • Pickle Juice: Don’t skip this! Pickle juice is our unexpected hero, adding a bright, briny acidity that perfectly cuts through the richness of the chicken and other flavors, preventing the burger from tasting flat.
  • Breadcrumbs: Plain breadcrumbs act as a binder, helping the patties hold their shape while also contributing to a tender texture. For a gluten-free option, simply use gluten-free breadcrumbs.
  • Chives: Freshly minced chives provide a delicate oniony flavor and a touch of vibrant green, adding a fresh aromatic lift to the burger mixture.
  • Butter: Diced cold butter is the secret to ultimate moisture. As it melts, it keeps the lean chicken incredibly juicy and contributes to a rich, delicious taste. Ensure it’s cold when adding it to the mixture to prevent premature melting.
  • Spices: Our carefully selected blend of chili powder, a hint of cayenne for a subtle kick (adjust to your preference), salt, and black pepper creates a robust and inviting flavor profile that perfectly complements the chicken.

How to Prepare Your Perfect Chicken Burgers

Follow these simple steps to create delicious, juicy chicken burgers that will impress everyone at your table:

Step 1: Prepare the Meat Mixture

In a large mixing bowl, combine all the ingredients for the chicken burger patties: ground chicken, grated onion, grated garlic, Worcestershire sauce, pickle juice, chili powder, cayenne pepper, breadcrumbs, ground pepper, salt, and minced chives. Use your hands to gently mix everything until just combined. Be careful not to overmix, as this can lead to tough burgers. Once combined, gently fold in the small cubes of cold butter.

Step 2: Form the Patties

Lightly moisten your hands with water to prevent the mixture from sticking. Scoop out approximately 1/3 cup of the chicken mixture for each burger. Roll the mixture into a ball in your palms, then gently flatten it into a patty about 1/2 inch thick. If desired, create a small indentation in the center of each patty with your thumb – this helps prevent the burger from bulging in the middle during cooking. Repeat this process until you have 6 evenly sized patties.

Chef’s Quick Tip!

It’s important to remember that chicken burgers, like many meats, will shrink slightly as they cook. If you’re aiming for larger burgers to match your buns, or simply prefer a more substantial patty, consider forming them slightly wider than your buns. This accounts for the natural shrinkage and ensures a perfect bun-to-burger ratio.

Step 3: Grilling Directions

  1. Preheat your grill to a medium-high temperature, around 375ºF (190ºC). To prevent sticking and keep your grill clean, place a piece of aluminum foil on top of your grill grates and spray it generously with nonstick cooking spray.
  2. Carefully place the ground chicken burger patties over direct heat. Grill them for approximately 4 minutes on each side. You’re looking for beautiful golden-brown grill marks and a firm texture.
  3. Once the patties have a good sear and distinct grill marks, move them to indirect heat. Immediately top each burger with a slice of your chosen cheese. Close the grill lid and cook for an additional 2 minutes, or until the cheese is perfectly melted and bubbly. Ensure the internal temperature of the burgers reaches 165ºF (74ºC) using a meat thermometer for food safety.

Step 4: Let the Burgers Rest

Once cooked to perfection, carefully remove the chicken burgers from the grill and transfer them to a clean plate. Allow them to rest for approximately 5 minutes. This crucial step allows the internal juices to redistribute throughout the patty, ensuring every bite is as juicy and tender as possible.

Step 5: Serve and Enjoy

Alternative Cooking Methods for Your Chicken Burgers

No grill? No problem! These versatile chicken burgers can be cooked using several other methods to achieve delicious results. Just remember, regardless of the method, always ensure the internal temperature reaches 165ºF (74ºC) for safe consumption.

Pan Fry: Heat a nonstick skillet over medium-high heat with a tablespoon of olive oil. Cook the chicken burgers for about 5-6 minutes per side, or until beautifully browned and cooked through. Press them gently with a spatula occasionally to ensure even contact with the pan.

Bake: Preheat your oven to 375ºF (190ºC). Place the patties on a baking sheet lined with parchment paper. Bake for 10-15 minutes, flipping halfway through, until they are golden brown and cooked to the proper internal temperature.

Always use a meat thermometer to confirm your burgers have reached an internal temperature of 165ºF (74ºC).

  • 2 tablespoons minced chives
  • 3 tablespoons butter, cold and cut into small cubes

Burger Sauce

  • ½ cup Greek yogurt

  • ¼ teaspoon smoked paprika
  • ½ teaspoon chili powder
  • 1 tablespoon ketchup
  • ½ tablespoon lemon juice

  • ⅛ teaspoon ground pepper

Other ingredients

  • 6 burger buns
  • 6 slices of swiss cheese, or cheddar
  • 1 large avocado, pitted and cut into thin slices
  • 1 large Roma tomato, cut into thin slices
  • 6 large pieces of iceberg lettuce

Instructions

  • Preheat the grill to 375ºF (190ºC).
  • Prepare the burger sauce: In a medium bowl, combine all of the sauce ingredients. Mix well until everything is smoothly combined. Cover and place the sauce in the refrigerator to chill while you prepare the burgers.

  • Next, place all of the ingredients for the chicken burgers (ground chicken, grated onion, grated garlic, Worcestershire sauce, pickle juice, chili powder, cayenne pepper, breadcrumbs, ground pepper, salt, and minced chives) into a large bowl. Mix gently until everything is just well combined. Then, carefully fold in the cold butter cubes, distributing them evenly throughout the mixture. Avoid overmixing.

  • Lightly wet your hands with a little water to prevent sticking. Use a ⅓ cup scoop to measure out the burger mixture, then form it into a ball. Gently flatten the ball into a ½ inch thick patty. Place the formed patty onto a lightly greased plate. Repeat this process until all of the burger mixture has been made into patties. This recipe yields approximately 6 burgers.
  • Lay a piece of aluminum foil on your grill grates and spray it generously with a non-stick cooking spray. Place the burger patties over direct heat and grill for 4 minutes on each side, until beautifully charred and firm.

  • Once the burgers have good grill marks and are firm, move them to indirect heat. Place a slice of cheese on top of each burger. Allow the patties to cook over indirect heat for about 2 minutes, or until the cheese has melted beautifully. Crucially, ensure the internal temperature of each burger reaches 165ºF (74ºC) using a meat thermometer. Remove the burgers from the grill.
  • Transfer the cooked burgers to a clean plate and let them rest for 5 minutes. This allows the juices to redistribute, ensuring a perfectly moist burger.
  • Assemble the burgers: Place a crisp piece of iceberg lettuce on the bottom half of your bun. Layer with thin slices of tomato, creamy avocado, and finally, the juicy chicken burger patty.
