  • 8 oz. pappardelle pasta
  • 8 oz. Bella mushrooms, sliced
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt, separated
  • 10 oz. cherry tomatoes, halved
  • 2/3 cup pesto, or vegan pesto
  • 2 tablespoons pasta water

Instructions

  • First, follow the detailed instructions in our homemade pesto guide to prepare your fresh pesto. Please note that this pasta recipe requires double the quantity typically yielded by that pesto recipe, aiming for approximately 2/3 cup of pesto. Once prepared, set your vibrant homemade pesto aside.

  • Next, bring a large pot of generously salted water to a rolling boil. Add your chosen pasta (pappardelle works wonderfully here) to the boiling water, stirring periodically to prevent the strands from sticking together. Cook according to package directions until al dente.
  • Meanwhile, place a large skillet or sauté pan over medium-high heat. Add 2 tablespoons of olive oil to the hot pan.
