  • 3 teaspoons fajita seasoning, separated (homemade recommended)
  • 1 large green bell pepper, thinly sliced
  • 1 large red bell pepper, thinly sliced
  • 1 large yellow bell pepper, thinly sliced

  • 4 cloves garlic, thinly sliced
  • 2 tablespoons avocado oil
  • 8 small flour tortillas (corn tortillas work, too), toasted

  • ½ cup fresh chopped cilantro
  • ¼ cup table crema or sour cream
  • Salsa or guacamole
  • Shredded cheese or cotija cheese
  • Lime wedges
  • Pickled jalapeños

Instructions

  1. Tenderize & Season Steak: Place flank steak on a cutting board, cover with plastic wrap, and pound until about ¾-inch thick. Season generously with coarse salt on both sides, massaging it into the meat. Set aside.
  2. Slice Veggies: Thinly slice bell peppers (green, red, yellow), red onion, and garlic. A mandoline can help achieve even slices. Set aside.
  3. Slice Steak: Slice the tenderized flank steak into thin strips, always cutting *against the grain* of the steak for tenderness, using a sharp knife.
  4. Cook Steak: Heat a large skillet (preferably cast iron) over medium-high heat with avocado oil. Once hot and shimmering, add sliced steak strips in a single layer (cook in batches if needed). Sprinkle with 1.5 teaspoons of fajita seasoning. Cook for 2-3 minutes, tossing occasionally, until browned with some pink remaining for medium-rare. Remove steak with a slotted spoon, leaving drippings in the pan, and set aside.
  5. Sauté Veggies: Add sliced onion and garlic to the skillet with beef drippings. Sauté for 2 minutes. Add bell peppers and toss. Season with the remaining 1.5 teaspoons of fajita seasoning. Cover and sauté for 5-6 minutes, stirring periodically, until tender-crisp.
  6. Combine: Add the cooked steak back to the skillet with the softened peppers. Cook for an additional minute, tossing to combine and warm through, ensuring flavors meld.
  7. Serve & Enjoy: Remove from heat. Serve the sizzling fajita steak and vegetables immediately with warm tortillas and your favorite optional toppings.

Tips & Notes

  • Flank steak is preferred for its flavor and tenderness when prepared correctly. Skirt steak is an excellent alternative and can be used interchangeably.
  • Using a variety of bell pepper colors not only makes the dish visually appealing but also adds subtle variations in sweetness and flavor.
  • Homemade fajita seasoning is highly recommended for the best flavor and control over ingredients. If using store-bought, remember it tends to be saltier; adjust accordingly.
