  • 1.5 cups white rice, or any kind of rice
  • 3 cups water

For the BBQ Grilled Chicken

  • 2 teaspoons dried thyme
  • 1/2 teaspoon allspice
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 2 lbs. boneless, skinless chicken breast
  • 1/3 cup BBQ sauce, any kind

For the Coleslaw

  • 4 cups raw kale coleslaw mix
  • 1/4 cup lime juice
  • 1/4 cup apple cider vinegar
  • 2 teaspoons honey
  • 1/2 onion, thinly sliced (preferably red onion)
  • 1/4 cup fresh cilantro, chopped

For the Black Beans + Corn Medley

  • 15 oz. canned black beans, rinsed and drained
  • 2 ears of corn, shucked
  • 1 teaspoon ground cumin
  • 1/2 lime, juiced

Instructions

  • Prepare the Rice: Preheat your grill to 400ºF. In a saucepan, combine 1.5 cups of white rice with 3 cups of water. Bring to a boil, then reduce the heat to a low simmer, cover, and cook until the water is absorbed and the rice is light and fluffy (approximately 15-20 minutes). Set aside, keeping it warm if serving immediately.
  • Season the Chicken: In a small bowl, mix all the dry spices for the BBQ chicken (thyme, allspice, nutmeg, cinnamon, cayenne, garlic powder, pepper, and salt). Pat the boneless, skinless chicken breasts dry with paper towels, then evenly distribute the dry rub over all sides of the chicken. This ensures a flavorful crust.
  • Grill Chicken & Corn: Place the seasoned chicken breasts and shucked corn on the preheated grill. Grill for a total of 15-20 minutes. Rotate the corn every five minutes to ensure even charring and cooking.

  • Baste the Chicken: Approximately 8 minutes into grilling, flip the chicken breasts and generously brush half of the BBQ sauce over them.
