Ingredients

Broccoli Orange Salad

  • 1.5 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • ½ tablespoon fresh lime juice
  • 1 tablespoon freshly grated ginger
  • 3 cups chopped broccoli
  • ¼ large red onion, minced
  • 2 large oranges, peeled, rind removed, and chunked
  • 1 cup shelled edamame
  • ½ teaspoon sea salt
  • 1 tablespoon sesame seeds

Crispy Teriyaki Chicken

  • 1.5 lbs. frozen chicken nuggets (I used Just Bare)
  • ½ cup teriyaki sauce (I used Primal Kitchen)

Instructions

  1. Add rice vinegar, sesame oil, lime juice, and grated ginger to the bottom of a large bowl. Whisk to combine.

  2. Add the broccoli, red onion, oranges, edamame, salt, and sesame seeds to the bowl and toss the ingredients together. Be sure all of the ingredients are coated in the sauce. Cover and place in the refrigerator. The longer the broccoli sits in the sauce, the easier it will be to eat.

  3. Add the chicken to an air fryer and cook for 6-8 minutes at 375ºF or until golden brown. Remove and toss with teriyaki sauce.

  4. Remove the broccoli salad from the fridge and top the salad with the cooked chicken, and enjoy immediately.

  • I recommend cooking the chicken nuggets from frozen in the air fryer.

  • If you would like the sauce to be spicy, add a few teaspoons of gochugang, chili crisp, or chili garlic sauce.
