Instructions

  1. Prepare Meatballs: In a large bowl, combine ground chicken, rolled oats, flour, grated sweet potato, garlic powder, ground ginger, turmeric, cumin, salt, pepper, and 1 tablespoon of olive oil. Mix gently until just combined, being careful not to overmix.
  2. Form Meatballs: Use a tablespoon scoop to portion the mixture, then roll each portion between slightly moistened hands to form smooth meatballs.
  3. Brown Meatballs: Heat 1 tablespoon olive oil in a large cast-iron skillet over medium-high heat. Brown the formed meatballs on all sides for 4-5 minutes until golden, but not fully cooked through. Remove from the skillet and set aside.
  4. Make Curry Sauce: In a separate bowl, whisk together coconut milk, green curry paste, lime juice, green dragon/hot sauce (if using), and salt and pepper to taste. Mix until smooth.
  5. Sauté Vegetables: In the same skillet, add another tablespoon of olive oil if needed. Sauté sliced red onion, red bell pepper, and snow peas for 2-3 minutes until they begin to soften slightly.
  6. Simmer & Cook: Pour the prepared curry sauce over the sautéed vegetables in the skillet. Bring to a gentle boil, then reduce heat to a simmer. Return the browned meatballs to the skillet, nestling them into the sauce. Cover and simmer for 10-15 minutes, or until meatballs are fully cooked (internal temperature 165°F / 74°C).
  7. Serve: Serve hot over your favorite rice or grain, garnished with fresh cilantro or lime wedges if desired.
