  • 1 cup white quinoa, rinsed and uncooked
  • 1 cup yellow onion, minced
  • 2 medium bell peppers, any color, chopped into bite-sized pieces

  • 1/2 cup hoisin sauce, or gluten-free hoisin sauce
  • 1 tablespoon minced garlic
  • 2 tablespoons soy sauce or tamari, low sodium
  • 1/2 tablespoon fresh ginger, minced (fresh ginger paste works, too)
  • 1.25 cups water
  • 1 cup cashews, raw or roasted work
  • Optional garnishes: green onion and/or sesame seeds

  1. First, preheat your oven to 375ºF (190ºC). Lightly spray a 9×13 inch casserole dish with coconut oil cooking spray or your preferred cooking oil to prevent sticking.
  2. Next, spread the 1 cup of rinsed, uncooked quinoa evenly across the bottom of the prepared casserole dish. Layer the diced yellow onion and chopped bell peppers over the quinoa. Arrange the diced boneless, skinless chicken breast evenly on top of the vegetables.
  3. Prepare the savory sauce by combining the hoisin sauce, minced garlic, low-sodium soy sauce (or tamari), fresh minced ginger, and 1.25 cups of water in a medium bowl. Whisk everything together thoroughly with a fork or small whisk until well combined.
