  • 8 oz. fusilli

Instructions

  • Begin by preheating your oven to 400ºF (200ºC).
  • Place cashews into a large bowl. Bring 2 cups of water to a boil and pour the boiling water over the cashews. Let them sit and soak for at least 15 minutes to soften. Drain well before use.
  • Prepare the head of garlic: chop off one end to expose the cloves, place it on a piece of tin foil, drizzle generously with olive oil, and wrap tightly. Roast at 400ºF (200ºC) for 30 minutes. Once roasted, squeeze the soft cloves out of their peels.
