- Next, add the panko breadcrumbs, diced red bell pepper, minced white onion, chopped fresh parsley, chili powder, garlic powder, salt, paprika, the large egg, mayonnaise, tabasco sauce, and 1 tablespoon of olive oil to the bowl.
- Using a spoon or your hands, thoroughly mix all of the ingredients together until they are well combined and the mixture starts to stick together to form a cohesive ball.
- Form the salmon patties: Use a 1/3 cup scoop to portion the mixture into 10-12 small balls. Gently flatten each ball between your hands to create uniform patties, about 1/2 to 3/4 inch thick. Place them on a plate. Optionally, chill the formed patties in the refrigerator for 15-30 minutes to help them firm up.
- Pan-fry: Heat a large skillet over medium-high heat and add one tablespoon of olive oil. When the oil is shimmering, add 3-4 patties (without overcrowding the pan) and cook for 2-3 minutes on each side, or until they are golden brown and heated through. Remove from heat, add another tablespoon of olive oil, and repeat with the remaining patties until all are cooked.
- Serve and enjoy these delicious salmon patties alone, on top of a salad, or with your favorite sides and sauces!
Tips & Notes
- For best results, ensure your cooked salmon is chilled, not warm, before mixing.
- If the mixture seems too dry, add a tiny bit more mayonnaise (1/2 tsp at a time) until it binds well. If too wet, add a bit more panko.
- Chilling the formed patties for 15-30 minutes before frying can help them hold their shape better.
