  • 2 teaspoons cumin
  • 4 cups beef broth
  • 4 cups mushroom broth
  • 6 cups kale, deboned and chopped
  • 1 teaspoon salt

Instructions

  • Heat a large Dutch oven over medium-high heat. Add the minced pancetta and ground turkey.
  • As the turkey cooks, use a wooden spoon to break it into large chunks (avoid breaking it into very small pieces). Cook the pancetta and turkey for 1-2 minutes until browned on the outside, but not fully cooked through.
  • Remove the pancetta and turkey from the Dutch oven. Carefully deglaze the pan with the red wine. The wine will sizzle, releasing all the browned bits from the bottom of the pot, and create an amazing aroma.
