  • 9 graham crackers, full sheets
  • 4 tablespoons unsalted butter, room temperature

Cheesecake Filling

  • 8 oz. cream cheese, room temperature
  • 1/2 cup plain Greek yogurt, any % fat
  • 1/4 cup honey
  • 1 large egg white
  • 1 teaspoon vanilla extract
  • 1/3 cup cranberry sauce*, homemade or store-bought
  • optional: lemon zest for garnish

Instructions

  • Preheat your oven to 350ºF (175ºC). Line a standard 12-cup muffin tin with paper muffin liners. For easy removal, generously spray the inside of each liner with nonstick cooking spray. Set the prepared muffin tin aside.
  • To create the graham cracker crust, break the graham crackers into pieces and place them along with the room temperature butter into a high-speed food processor. Process on high until the mixture forms fine, moist crumbles that hold together when pressed.
  • Spoon approximately 2 heaping tablespoons of the graham cracker crumble into the bottom of each prepared muffin cup. You should have enough crust mixture to create 12 perfectly sized mini cheesecake bases. Use the back of a spoon or your fingers to firmly press the crumble down into an even layer at the bottom of each cup.
