- 30 oz. black beans, drained and rinsed
- 15 oz navy beans, drained and rinsed
- 28 oz. hominy, drained and rinsed (or yellow sweet corn)
- 15 oz. diced tomatoes
- 15 oz. tomato sauce
- 3 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1/2 teaspoon ground black pepper
- 5 cups vegetable broth, divided (or any broth)
- 2 cinnamon sticks
- 2 tablespoons fresh cilantro, chopped
Suggested Toppings
- 1 cup 2% Skyr Yogurt
- 1 cup shredded cheddar cheese

Instructions

- Add the finely diced poblano pepper, green bell pepper, and uncooked quinoa to the Dutch oven. Mix all the ingredients well to combine. Toast the quinoa for 3-4 minutes, stirring continuously to prevent sticking, until it begins to lightly brown and release a nutty aroma.

- Introduce the drained and rinsed black beans, hominy, diced tomatoes, tomato sauce, chili powder, ground cumin, onion powder, paprika, ground black pepper, and 4 cups of vegetable broth to the Dutch oven. Stir everything together thoroughly to ensure all ingredients are well-combined. Bring the mixture to a gentle boil over medium-high heat.

- Once the chili reaches a boil, reduce the heat significantly to low. Add the two cinnamon sticks to the pot. Cover the Dutch oven with its lid and allow the chili to simmer gently for 10-15 minutes, or until the quinoa is fully cooked and tender.
- The quinoa will have expanded considerably during the cooking process, contributing to the chili’s thick consistency. Once the quinoa is completely cooked, stir in the remaining 1 cup of vegetable broth. This helps to achieve the perfect chili consistency.

- Before serving, carefully remove the cinnamon sticks from the chili.
