Instructions

  • Slice the tofu in half lengthwise and wrap it tightly in a paper towel or clean tea towel. Place a heavy pan or several heavy items on top of the tofu for at least 1 hour to press out excess moisture.

  • While the tofu is pressing, prepare the green onion salad. In a medium bowl, combine all ingredients for the green onion salad (sliced green onions, sesame oil, rice vinegar, white sesame seeds, kosher salt, and fresh cilantro). Toss to combine thoroughly. Cover and place the salad in the refrigerator to chill and allow the flavors to meld.

  • Next, mix up the stir-fry sauce. Add all the ingredients for the stir-fry sauce (soy sauce, rice vinegar, water, chili garlic sauce, grated ginger, fish sauce, minced garlic, cornstarch, and light brown sugar) to a mason jar with a lid, or a small mixing bowl. If using a jar, cover tightly and shake vigorously until all ingredients are well combined and the cornstarch has fully dissolved, leaving no lumps. If using a bowl, whisk thoroughly until smooth. Set the sauce aside.
  • Cook the noodles. Bring a large pot of heavily salted water to a rolling boil. Add the ramen noodles to the boiling water and cook according to package instructions until the noodles are al dente (typically 5-7 minutes). Before straining the noodles, carefully scoop out and reserve 1 cup of the starchy pasta water. Drain the noodles, rinse them with cold water to prevent sticking, and set aside.
  • Sauté the vegetables. Heat the coconut oil (or your preferred cooking oil) in a large skillet or wok over medium-high heat. Once the oil is melted and hot, add the sliced white mushrooms and season them with ½ teaspoon of kosher salt. Cook the mushrooms down for about 8-10 minutes, stirring occasionally, until they have released their moisture and are nicely browned.
  • Add the chopped red bell peppers to the pan with the cooked mushrooms and the remaining ½ teaspoon of salt. Sauté for another 2 minutes until the bell peppers are tender-crisp. Transfer the sautéed vegetables to a clean bowl and set aside.
  • Once the tofu has been pressed, slice it into uniform 1-inch cubes. Place the tofu cubes into a large bowl. Add the 2 tablespoons of cornstarch and 1 teaspoon of kosher salt to the bowl. Toss gently until all the tofu pieces are evenly coated with the cornstarch mixture.
