- ½ small red onion, minced
- ¼ teaspoon sea salt
- 2 teaspoons red wine vinegar
- ¼ cup crumbled cotija cheese
- 1 avocado, chopped
- 2 tablespoons chopped fresh cilantro

- Heat 1.5 tablespoons avocado oil in a 7 or 8-quart Dutch oven over medium-high heat.
