Why does it stand out? This recipe offers an exhilarating twist on the traditional chicken noodle soup. I absolutely adore its generous inclusion of additional vegetables and the fantastic spicy kick that salsa verde provides. My ultimate weakness in soup is fresh kale. It not only adds a wonderful boost of greens but also contributes a delightful texture and an earthy, wholesome flavor that completes every spoonful. It’s simply yummo!

Unveiling the Secret Ingredient: Salsa Verde Magic

How did we manage to infuse such an incredibly vibrant and irresistible flavor into this soup? The secret lies in one simple, yet powerful ingredient: Salsa Verde! Much like in our incredibly popular Crockpot Chicken Salsa Tacos, we harness the convenience and rich taste of a jar of all-natural salsa to create a flavor profile that is truly out of this world.

All you need to do is add your favorite jar of quality salsa verde to the pot, and let it work its magic. For this particular “Green Monster” recipe, I highly recommend the Herdez Mild Salsa Verde. Its flavor balance is absolutely spot-on, and its beautiful green hue perfectly enhances the “green monster” theme of this dish. This salsa seamlessly integrates, adding depth, a hint of tang, and a gentle warmth without overwhelming the other ingredients.

Of course, feel free to use your personal favorite brand of salsa verde, but do pay attention to the spice level. We opted for a mild version to ensure it’s palatable for a wider audience, but if you prefer a bolder kick, don’t hesitate to choose a medium or hot salsa verde. Just remember, the salsa is a key flavor component, so pick one you truly enjoy!

Absolutely! When prepared at home, chicken noodle soup is a powerhouse of nutrition. Our Green Monster version exemplifies this, made with lean chicken breast, an abundance of fresh vegetables like carrots, celery, and kale, aromatic spices, and your preferred noodles. It offers a balanced meal rich in protein, fiber, and essential vitamins.

Why Do We Eat Chicken Noodle Soup When We’re Sick?

Chicken noodle soup has earned its reputation as the quintessential “sick soup” for excellent reasons. It’s incredibly soothing and easily digestible, making it ideal when your body needs gentle nourishment. The warm broth helps hydrate and soothe a sore throat, while the hearty vegetables provide vital vitamins and minerals. Lean chicken offers protein for energy and recovery, and the noodles supply easily absorbed carbohydrates.

Pro Tip: Add a wedge of fresh lemon to your bowl for an extra boost of Vitamin C and anti-inflammatory benefits, further aiding your recovery.

Is Chicken Noodle Soup Gluten-Free?

Yes, it can be! To enjoy a gluten-free version of chicken noodle soup, simply prepare it from scratch and ensure you use certified gluten-free noodles. Mastering the Art of Freezing Chicken Noodle Soup for Later

Meal prepping and freezing soup is a fantastic way to ensure you always have a healthy, homemade meal ready. However, when it comes to freezing chicken noodle soup, there’s a crucial pointer: always add the noodles later. This is paramount because cooked noodles, when frozen and reheated, tend to become unpleasantly soggy and lose their texture.

To effectively freeze your Green Monster Spicy Chicken Noodle Soup, follow the recipe instructions precisely, but completely omit the step of adding the noodles. Once your delicious soup base has cooled entirely to room temperature, transfer it into freezer-safe containers or durable gallon-sized freezer bags. Make sure to remove as much air as possible before sealing to prevent freezer burn and maintain freshness. Your soup can be safely stored in the freezer for up to 3 months, ready whenever you need a quick, comforting meal.

To thaw and reheat: When you’re ready to enjoy your frozen soup, remove it from the freezer and allow it to thaw completely on your countertop or in the refrigerator overnight. Once thawed, transfer the soup into a large stockpot and gently reheat it over medium-high heat until it reaches a gentle simmer. While your soup is reheating, cook your chosen noodles in a separate pot according to package directions until they are al dente. Once cooked, drain the noodles thoroughly and add them directly into the simmering soup just before serving. This ensures perfect noodle texture every time!

Ingredients

  • 2 tablespoons olive oil
  • 4 medium carrots, diced (approximately 1.5 cups)
  • 4 large celery stalks, diced (approximately 1 cup)
  • 2 tablespoons minced garlic
  • 1/2 medium yellow onion, finely diced
  • 1 (4-oz.) can green chiles
  • 1.5 lbs. boneless, skinless chicken breast
  • 8 cups chicken broth
  • 1 (16 oz.) jar salsa verde (we highly recommend Herdez Mild Salsa Verde, but use your favorite)
  • 2 tablespoons Jalapeño hot sauce (or any green hot sauce for an extra kick)
  • 1 (15-oz.) can white northern beans, thoroughly drained and rinsed
  • 4 cups chopped kale, deboned and roughly chopped
  • 8 oz. uncooked noodles, any variety you prefer (e.g., egg noodles, whole wheat pasta)

Instructions

  1. Heat 2 tablespoons of olive oil in a large stockpot or Dutch oven over medium-high heat until shimmering.
  2. Once the olive oil is fragrant, add the diced carrots, celery, minced garlic, finely diced yellow onion, and green chiles to the pot. Sauté the vegetables over medium-high heat for 5-7 minutes, or until the onions become translucent and the vegetables start to soften.
  3. Carefully place the raw chicken breast on top of the sautéed vegetables. Then, pour in the salsa verde, hot sauce, and chicken broth. Stir everything together gently to combine.
  4. Increase the heat to high and bring the soup to a rolling boil, leaving the pot uncovered.
  5. Once boiling vigorously, reduce the heat to low, cover the pot with a lid, and allow the soup to simmer gently for 30 minutes. This allows the chicken to cook through and the flavors to meld.
  6. While the soup is simmering, prepare your noodles. Bring a large pot of salted water to a boil. Add the noodles and cook according to package instructions until they are al dente. Remove from heat, drain thoroughly, and set aside.
  7. After the 30-minute simmer, once the chicken is fully cooked (internal temperature of 165°F or 74°C), carefully remove the chicken breast from the soup.
  8. Using two forks or your hands (once cool enough to handle), carefully dice or shred the cooked chicken breast into small, bite-sized chunks. Return the chicken back into the soup.
  9. Add the chopped kale and drained white beans to the soup. Stir well to ensure the kale is submerged in the hot broth.
  10. Cover the pot again and let the soup simmer for an additional 5-10 minutes, or until the kale has completely wilted and softened.
  11. Finally, just before serving, add the cooked noodles to the soup. Stir to combine and serve hot.

Tips & Notes

  • Salsa Verde Selection: The type of salsa verde you choose will significantly impact the soup’s overall flavor. If you enjoy a spicier soup, opt for a medium or hot salsa verde. For a milder experience, stick with a mild variety, as we did. Always taste your salsa verde before adding it to ensure it matches your preference!
  • Noodle Storage: To prevent soggy noodles, we strongly recommend storing the cooked soup base and cooked noodles separately. Add the noodles to individual servings of soup just before eating. This preserves the perfect texture of both components.
  • Freezing Instructions: If you plan to freeze this soup for future enjoyment, prepare the recipe as instructed, but do NOT add the noodles. Follow the detailed steps in THIS comprehensive post for the best freezing and thawing results.
  • Customization: Feel free to experiment with other leafy greens like spinach or collard greens. You can also add a squeeze of lime juice at the end for an extra burst of freshness.
  • Garnishes: Enhance your bowl with fresh cilantro, a dollop of Greek yogurt or sour cream, avocado slices, or a sprinkle of shredded cheese for added flavor and texture.
